Bologna Gravy and Boiled Potatoes-Traditional Newfoundland

I guess you are looking for a bologna meal if so you are in the right place.
I have a couple of bologna meals available on our website, this one bologna gravy and Bologna Stew - Traditional Newfoundland and I will share the link to that one for you.
Bologna is called Newfoundland steak in NL by many people, we grow up with this packed meat in a roll. This use to be a very cheap meal but not anymore bologna is very expansive now and only eaten occasional.
Not a lot of steps to this meal, but if you make it you will love it, it keeps well in the fridge for a few days too for leftovers. I can remember having this meal once a week and leftovers for lunch time when we got home from school.

Ingredients
- Bologna - 3 cups chucked
- Potatoes - 4-6 each
- Onion - 1 medium chopped
- Butter - 2 tbsp
- Flour - 2-3 tbsp
- Broth - 3 cups
- Sea salt - pinch ( optional )
- Black pepper - pinch as needed
- Gravy Browning or Worcestershire sauce - pinch
Instructions
THIS IS A QUICK AND EASY MEAL IF YOU DON’T KNOW WHAT TO HAVE.
- In a medium saucepan place your already peeled potatoes and start to boil with a pinch of sea salt, when cooked drain and seat aside. Keep liquid for gravy!
- Then place chopped bologna in medium or small chucks and place in a frying pan on a medium heat with 1 tbsp butter, let fry until golden brown.
- Remove fried bologna and place in a bowl until ready to use, then add 1 tbsp butter to frying pan and start frying chopped onions.
- Continue frying until onions are transperent or cooked, add pinch salt and pepper, after add 2-3 tbsp flour to pan then mix around until combined,
- Then add 3 cups vegetable or beef broth continue mixing until flour and onion mixture starts to thicken, then add a pinch of gravy browning or soy sauce to brown gravy.
- Add fried bologna back in frying pan, turn heat to simmer and cover.
- How to plate your quick and easy meal.
- Put potatoes and any other vegetables you would like in your plate, scoop a nice helping of your bologna gravy over top and pinch salt and pepper. Enjoy

Where do I start with this meal!
Years ago we had this meal at less once a week. When you made this meal it went a long way, everyone had access to potatoes and my Dad was a organic farmer so we have lots of fresh vegetables.
Bologna was the cheapest meat out there at that time and everyone loved it.
Sometimes when my Mom or Dad made this meal they boiled the bologna first and that took off any fat and salt that was compressed in to it.

There is not a lot of steps to this meal bologna gravy but it can be made the night before and warmed over the next day.
