Hi Bill: So sorry I’m just getting to your message, I don’t have any recipes for smoked caplin only pan fried and caplin run. When my dad was alive he would smoke caplin all the time in a old stove oven. It’s a funny story and I’m sure there is safer ways to do this, this was a old stove that he had replaced, he took the inside of the oven out and had it outside on a flat rock and the cover would close. He would have wood inside and a rack for the caplin and just have enough wood fire to smoke the caplin and dry then out but not cook them. haha if I had only taken a video or pictures back then of him doing this it would have been gold. Well me and my father been smoking caplin for years. And there’s alot of people had them from newfoundland to states side everbody like them .
We pickel them 15 mins in Salt.
Pour fishing salt in half bucket water put a med potato in bucket when the potato flotes .its 100 percent pickel .put caplin in bucket wait 15 mins take out of bucket .put caplin on fkake or what ever you decides use .to dry them 2 good days of sun and wind …take them put them in smoker .time depends on kind smoker you got and how much smoke flavor you like ..usley 2 to 4 hours in smoker ….thanks
