Our recipe for homemade pie crust is a method for two, I always say a rainy day pie crust. This one you can roll out and place on a piece of parchment paper and roll outwards. Then cover with a piece of clear wrap, then freeze for another day.....rainy day pie crust!
Before adding your spicy apple wedges to the unbaked pie crust, add about 1 tbsp oatmeal over unbaked pie crust and then top with spicy apple wedges.

Ingredients
- Apples - 5 cups, peeled and wedged
- Brown sugar - ½ cup
- Ground cloves - ½ tsp
- Ground cinnamon - 1½ tsp
- Fresh or ground ginger - 1 tsp
- Ground Nutmeg - ½ tsp
- All- purpose flour - 2 tbsp
- Lemon juice - 2 tsp
- Sea salt - ½ tsp
- Cold water - 3 cups or more
- Ingredient's for Crust:
- All-purpose flour - 2 cups
- Cold butter or margarine - ½ cup
- Sea salt - ½ tsp
- Cold water - ½ cup
- Ingredient's for Crumbles:
- All-purpose flour - 1 cup
- Brown sugar - ¼ cup
- Butter or margarine - 2 tbsp
- Roll oats - 1 cup
- Ingredient's for Caramel Sauce:
- Brown sugar - 1 cup
- Butter or margarine - 2 tbsp
- Vanilla - 1 tsp
- Milk or cream - ¼ cup
Instructions
Method for Apples:
In a bowl add peeled wedged apples of any type and top with water, lemon and sea salt to keep from going brown. Then when all apples are wedged drain water and add all the spices with 2 tbsp of flour and brown sugar, toss together and add to the pie pan with crust.

Method for Crust:
In a bowl add flour, butter or margarine and sea salt, blend together with your hand or mixer, until it crumbles.
Then add cold water, continue blending until formed into a ball.
Sprinkle counter with flour add pastry ball then cut into two pieces. Roll one piece until big enough for the pie pan. Pinch sides of pastry with four fingers to make it look nice on the sides…
If you are only making one pie, roll the other pastry on a piece of parchment paper then cover with a piece of clear wrap and roll away from yourself. Then freeze for another use.
Method for Crumbles:
In another bowl add all ingredients and pinch together by hand or mixer hook until all combined and crumbled.
After top crumble mixture over apples in pie pan, then place in a 350ºF preheated oven.
Bake for 35 to 40 minutes or until golden brown, remove from heat and rest on a wire rack for 5 minutes, then cut and serve with your favourite ice cream or whipping cream.
Method for Caramel Sauce:
Put butter in a measuring cup and melt in microwave for 30 seconds or more, then remove from microwave and add brown sugar and mix well. Then add vanilla and slowly add milk or cream, don’t use all if you don’t need it. Serve warm over pie!

This year local trees were full of apples and lot’s of them, I got so many gifted apples this year from friend’s and neighbours. Remember to take advantage of locally grown produce and berries, this will save you money and make your meal or dessert affordable….
