APPLE PEANUT BUTTER BARS

This is a simple recipe with only a few ingredient's with delicious apples on top.
Apple in season or from the farmers market or grocery store....get a apple you enjoy eating.
Brown sugar, peanut butter, oats and apples of choice!!
This is a lovely and very affordable bar, it makes a lovely school or work sneak.

Ingredients
- Apples - 2 to 4 each
- Butter or margarine - ½ cup
- Peanut Butter - ½ cup
- Brown sugar - 1 cup, packed plus one tbsp
- Vanilla - 1 tsp
- All- purpose flour - 1 cup
- Baking powder - 1 tsp
- Baking soda - ½ tsp
- Lemon juice - 1 tbsp, for apple wedges
- Confectioners sugar - ¼ cup
- Roll oats or oatmeal - ½ cup
Instructions
Peel, core and thinly slice apples of choice, cover with lemon juice to keep from going brown.
In a large bowl mix together peanut butter, butter, vanilla and brown sugar until smooth and creamy.
In a separate bowl add flour, oats, baking powder and baking soda; then fold in the peanut butter mixture. Until all combined well!
Prepare a square 8 or 9” pan with a piece of parchment paper. Then press all the mixture to the bottom with the back of your hand.
Cover evenly with apple slices. Sprinkle 1 tbsp brown sugar over top.
Oven baking: Preheat oven to 350ºf and bake for 45 - 50 minutes or until firm and light golden brown colour.
Cool completely before cutting in bars and sift with confectioners sugar over top.
Makes 16 bars.
Bonita’s Tips:
Sift flour before using to soften the grains.
Use any type of oats you like eating.
Cut apples just before topping them over peanut butter bars so they don’t get to brown.
Store in a airtight container with lid and keep in fridge until all eaten, or freeze for longer storage.
Allergens
Peanut butter and apple go together so lovely and they always made a lovely sneak together.
But adding oats, butter, brown sugar and a few more ingredients we all have in our cupboard turns this recipe into a lovely treat!!
