Having your pastry dough cold before rolling it out, for a flakier crust put dough in the fridge for 15 minutes before rolling it out. If you can't wait just roll it out and it will be equally as tasty.

Ingredients
- Apples - 4 peeled and wedged
- Strawberries - 1 pound
- Sugar - 1/2 cup
- Ground cinnamon - 1 - 1/2 tsp
- Ground cloves - 1/4 tsp
- Cornstarch - 2 or 3 tbsp
- Lemon juice - 1 tbsp
- Butter or margarine - 1 tsp
- PASTRY:
- All-purpose flour - 2- 1/2 cups
- Sea salt - 1/2 tsp
- Butter - 1/2 cup, COLD
- Cold water - 1/2 cup
Instructions
METHOD Filling:
Peel and cut your apple in wedges and put in a bowl add lemon juice and toss around. Then cut and rinse your strawberries and cut in wedges or half, add to bowl with apples and toss together.
Then add sugar, cornstarch, 1 tsp cinnamon and ground cloves and toss that into fruit.
See tart crust below for method, after ready add all the fruit mixture and fold up the sides and melt 1 tsp butter and brush sides, then sprinkle with sugar and cinnamon.
Pre-heat oven to 350ºF and set timer to 30 minutes or until golden brown, depending on your oven. When baked remove from oven and let rest for 10 to 15 minutes before cutting, unless you like to serve it hot. “ Fruit liquid will run if served hot “
Pastry Method:
- Mix flour, butter ( chop in pieces) add sea salt together in bowl mix with your hand or kitchen aid, add icy cold water mix until it shapes into a ball then remove from bowl/mixer. Leave 1/4 cup of flour for dusting counter top.
- Put a piece of parchment paper on the counter and sprinkle with flour, put your pastry ball on top of it then roll until all even.
- Then put pastry on a pan covered with a piece of parchment paper and, after poke holes in the bottom of crust, see above for baking.
Bonita’s Tips:
Cold butter and water make a flaky crust.
Letting tart rest after baking will set liquid and stop from running out.
