Apricot Squares

If you are looking to some delicious APRICOT SQUARES you are in the right place.
These delicious little apricot squares can be made with fresh, frozen or canned apricots and they will taste lovely. Take a few minutes to view our video and check out the photos and recipe, not a lot of steps to this recipe but you do have to make the crust from scratch.

Ingredients
- Apricots - 2 dozen, fresh, frozen, canned or dried
- Granulated sugar - 1/2 cup to 1 cup
- Lemon Juice - 1 Tsp or more
- Lemon zest - 1/2 Tsp
- SOFT CRUST:
- Flour - 2 1/2 Cups
- Sugar - 1/2 Cup
- Butter or margarine - 1/2 Cup
- Baking powder - 3 Tsp
- Evaporated Milk or Fresh - 1/2 Cup
- Sea salt - 1/2 Tsp
Instructions
Method for filling:
- Clean and cut apricots in pieces and remove stone.
- In a small saucepan, add apricots and sugar start cooking on a low heat until it starts to condense and thicken.
- Remove from heat and add lemon zest and lemon, stir and pour over half the crust and place the other half on top of apricots.
Method for dough:
- In a large bowl add butter and sugar mix together until creamy.
- Sift in 2 cups flour, leaving 1/2 cup to work the dough, sea salt and baking powder, then slowly fold milk through mixture.
- Continue doing this until all combined and start to form into a ball and kneading the dough together, by hand or kitchen aid, if you need more milk you can use a small about.
- After your dough is formed into a ball cut in half and start with the first half and roll it out about a 1/4 inch, on a piece of parchment paper or dusting the counter top with flour so the dough don’t stick.
- After you finished rolling the dough out flatten in the sides, place the dough on your cookie sheet and spread the filling over the dough and then roll the other piece of dough on a piece of parchment paper the same as the other piece.
- When finished place the top layer of dough on filling, 9 x 9 inch cookie sheet.
- Pre-heat your oven to 350ºF and bake for 20 minutes or until light golden brown.
- Remove from oven and let cool, cut to any size you wish and trim the sides if a little rough. Serve with a cup of tea.
BAKING TIPS:
- Let your dough cool in the fridge for 5 to 10 minutes to harden the butter before rolling dough.
- Having the filling made the day before or a few hours so it can be totally cold before using.
- If fresh apricots are not available use frozen or dried following the same method.
Allergens
Anytime of year is good for making tasty little squares or cookies, but usually around Christmas time I zero in on what cookies and cakes I would like to make to share with family and friends that visit over that season. These have always mean one of my favourite squares. They are easy to make and goes lovely with a cup of tea, so if you don’t believe me check out our short video and recipe. You can also make these lovely squares with dried apricots as well, they freeze lovely if you wish to make a batch in advance before you are ready to serve them and they will be lovely. You can’t just eat one and they make a great dessert if you were having a High Tea Party.

Bonita, if you are making this with dried apricots, should you soak them first?
Hi Susan: No you don’t need to soak them, just slow cook them and they brake apart nice. This is a lovely recipe, but I’m not always lucky enough to found fresh or frozen apricot here in these parts. Plus of course now we don’t want to be in the stores any longer then buying groceries thats needed. Stay safe and enjoy 🙂 Bonita

Hi Kate, Sorry I’m just getting to your message, I’m thinking about 2 cups or two 1.75g of dried apricots will work, more if you like lots of filling. I hope this helps and enjoy to the fullest. 🙂 Bonita
