AUTUMN SLAB PIE

If you are looking for a very simple and tasty recipe for a slab pie filled with your autumn preserves you are in the right place.
This recipe today is one I like make in the fall months to use some of my jams, jellies and apple butter or sauce.
This recipe I'm using pure lard but if you wish you can use butter!!
This is a lovely flaky pie crust and quick and easy to make.....
Before rolling out the pastry, after it's formed into a ball wrap in a piece of clear wrap and put in the fridge for 5 to 10 minutes.

Ingredients
- All- purpose white flour - 2 cups
- Lard, tender flake - ½ cup
- Sea salt - ½ to 1 tsp
- Cold Water - ½ cup
- FILLING:
- Jam, filling or jelly - 1½ cups, of choice
- LEMON GLAZE:
- Confectioners sugar - 1 cup
- Lemon juice - 1 tsp
- COLD water - 4 tsp
Instructions
In a bowl add flour and sea salt, then cut in pure lard until all combine. After slowly add COLD water and mix with mixer or by hand.
Then form into a ball, cut in two pieces and wrap in clear wrap and put in fridge for 15 minutes or longer to cool lard.
After dust counter with flour and put one ball of pastry on it and roll into 10” x 13” piece. Then roll pastry around the roller.
Then put a piece of parchment paper on a cookie sheet, place the rolled pastry on it and roll unto paper.
Top with filling of choice and spread evenly over uncooked pastry.
Then roll the second piece of pastry and put over the top of the filling. With four fingers pinch the sides of the pastry to seal the sides.
Brush some milk over the top. Then preheat your oven to 375ºf and bake this pastry for 35 to 40 minutes.
When baked remove from oven and let rest for 5 minutes, then make your glaze.
In a bowl add confectioners sugar, lemon juice and water mix together then pour over top of the autumn slab pie!
Cut in slabs and serve hot or cold. Serve with fresh fruit or berries!!
Bonita’s Tips:
Letting the pastry go cold after it’s made helps make it more flaky when baked.
Using a ready made jam, jelly or apple sauce, work great in this recipe, but you can use fresh berries or apples tossed in flour and sugar.
Allergens
After you roll out the pastry place on the cookie sheet with a piece of parchment paper and cover with your favourite jam, jelly, apple sauce or apple butter to make a delicious autumn slab pie. Then place the second piece of pastry over top. Pinch together the sides with four fingers to seal the sides….
Before baking the slab pie, brush with milk or cream. Then bake for 30 to 40 minutes or until golden brown. When baked remove from oven and drizzle with lemon icing recipe posted above.
