BBQ Codfish

If you are looking for a recipe to cook on your outside grill over this summer and fall...this is it!!
Our recipe is for any type of fish you have in season and a homemade bbq sauce.
Fresh atlantic codfish is what i'm using and it was a gift from our brother-in- law!!!

Mix those ingredient's together and sit aside until you are ready to pour over the last stage of cooking this meal.
You will need a cast iron pan or a grill safe frying pan to cook this outside, you can also cook it on your stove top or side burner....
After you season the cod fillets with sea salt, pepper and onion powder, make your homemade bbq sauce and pour over codfish in cast iron pan. Cover with a piece of foil wrap or lid. Cook 3 to 4 minutes on each side on low.

Ingredients
- Cod fillets - 4 to 6 boneless, skinless
- Onion - 1 medium, sliced
- Carrot - 2 medium, peeled and chucks
- Black or White Pepper - 1 tsp
- Sea salt - 1 tsp
- Onion powder - 1 tsp
- Worcestershire - 1 tbsp
- Ketchup - ¾ cup
- White vinegar - ¼ cup
- Brown sugar - 2 tbsp
- Oil - 1 tbsp
- Butter or margarine - 1 tbsp
- Broth or water - 1 cup
Instructions
Grilling time 15 minutes, prep-time 10 minutes, serving for 2 or 4 people.
METHOD:
- In a cast iron frying pan or pan of choice, on your outside grill or stove top, start the heat on a low to medium heat. Add butter, oil, sliced onions, chucked carrots, a pinch of sea salt, pepper and onion powder.
- Cover with lid or foil wrap or just leave open with grill cover down, cook for 5 minutes let soften.
- Season codfish fillets with sea salt, pepper and onion powder keep some for the bbq sauce. Add fillets on top of part cooked veggies.
- In a small bowl make BBQ sauce, add Worcestershire sauce, ketchup, white vinegar, brown sugar, sea salt, pepper and onion powder, mix together then add to cast iron pan over codfish and veggies.
- Cover again for another 3 to 4 minutes on both sides of fish, if you are not in any rush you can lower the heat and let simmer while you enjoy the outside with a cold drink.
- When cooked add to dinner plate and serve with boiled potatoes, or steamed rice, fresh bread or rolls, and a side of salad.
- Bonita’s Tips:
Use any type of white fish in season.
The same with onion, you use a onion you enjoy eating.
Make a homemade BBQ sauce or bottled bbq sauce.
I love cooking with my Dads cast iron pan and I’m thinking it’s about 50 years old or more. Dad loved cooking in this pan and made many amazing quick meals. So enjoy this meal today because it reminds me of meals he would make.
