Beef Barley Soup- Traditional Newfoundland

If you are looking for a homemade soup that will warm you from the inside out, this is it!
Beef barley soup is made many ways, some people don't have potatoes in their soup because of the extra starch. I like potatoes in beef barley soup and I remove some of the starch by soaking the barley for 1 - 1/2 hours in cold water, plus soak my potatoes to remove starch. This also speeds up the cooking time for your barley.
Years ago people had big families and they made their soups with lots of vegetables so it would go along ways.
Beef barley soup is one of my Moms favourite soups, years ago when she had a house full of kids to feed she would make this soup a lot, but now she waits until I make it or one of my sisters.
If you are planning a family dinner or a meal for two this beef Barley soup is prefect, I call it a crowd pleaser. Plus check out my recipe for homemade bread and you can make a tray of bread rolls, so good.
I love making extra soup so I can bottle them in my mason jars for another day, for those days when you are so busy you are wondering what to have for supper. Just take out your soup pop the lid and pour in your sausepan to warm, then make yourself a grill cheese sandwich.

Ingredients
- Olive oil - 1 tbsp
- Rosemary - ½ tsp
- Thyme - ½ tsp
- Oregano - ¼ tsp
- Sea Salt - 1 tsp
- Black Pepper - 1 tsp
- Water - 3½ to 4 cups
- Tomatoes - 28oz can, 2 cups
- Beef Broth - 5 cups
- Onions - 2 medium chopped
- Carrots - 2
- Potatoes - 2
- Turnip or Rutabaga - 1
- Celery - 3 sticks
- Barley - ½ cup
- Beef Rib Roast - 1 small
Instructions
Method:
In a roaster with a lid add your beef rib with bone or small roast season with rosemary, oregano, black pepper, sea salt, and olive oil, 1 cup water.
Preheat your oven to 350°F place your roaster in the oven for one hour covered,
Then 30 minutes uncovered, 30 minutes into the covered cooking add your two chopped onions.
Peel and chop in small pieces all your vegetables into a bowl of cold water.
In a glass of cold water add your barley for 1½ hours until your beef has baked.
In a large boiler, add 5 cups of beef stock/ broth and 1 can of tomatoes and let simmer until you are ready to add other ingredients.
When beef has been baked, remove from the oven cut in small pieces then add to the boiler.
Add two cups of water to the roaster then remove all dippings, after adding to the boiler.
Drain water off the barley and add to the boiler let cook for 30 minutes.
Then after 30 minutes, drain water off vegetables and add to the boiler, let boil for another 30 minutes.
Simmer until ready to serve, or bottle in mason jars for another time.
Bonita’s Tips:
Soaking barley for one hour or so will remove some starch, also soaking your potatoes will remove the starch.
Roasting or frying your beef roast or any type of beef will build the flavours and make your soup taste amazing.
Making your own stock/broth saves money and builds more flavours in your soup.
When making any soup you need to build on those flavours by layering the ingredients and releasing all those fresh flavours. This soup I have a rib roast that got a lot of marbling and that means fat, just enough to make this soup burst with flavours. I browned the roast by baking it in a 350°F oven for 1 hour, 1/2 hour covered and 1/2 hour uncovered. The beef was roasted nice and brown then chopped in small pieces and place in a boiler three quarters full of beef broth.
Remember you are making this soup for yourself or maybe your family and who knows better then anyone what your family likes. So if you like a different vegetable or more beef or barley just add it in,
“I will never know.”
