We have many recipe using blueberries and all of them is for fresh or frozen blueberries.
Our recipe for Blueberry Squares is one my mom would make anytime of the week, using fresh or frozen blueberries.
My mom would call this type of recipe using these ingredient's rough grub. The basic staple of ingredient's she would have on hand, like flour, sugar, evaporated milk, butter, salt and eggs.
Blueberries are available to pick starting in July up to November if the frost don't get them. But they are still lovely to freeze and use in a number of tasty recipe...Much like this one for blueberry squares.
These blueberries where freshly picked last fall here in Newfoundland Labrador, the blueberries are so tasty and full of sweet juices.
Mix egg yolks, vanilla and evaporated milk together.
Toss into bowl with the other ingredient's to continue mixing.
Grease a square pan with butter or oil and scoop the batter in to the pan.
After the cake base is baked for 20 minutes remove from oven and add the fresh or frozen blueberries...Top with meringue and bake for another 15 to 20 minutes.

Ingredients
- Melted Butter or margarine - 4 tbsp
- Sugar - ¼ cup
- Egg yolks - 2 each
- All-Purpose Flour - ¾ cup, sifted
- Baking powder - 1 tsp
- Sea salt - ¼ tsp
- Evaporated Milk - ¼ cup
- Vanilla extract - ¼ tsp
- TOPPING:
- Egg whites - 2 each
- Sugar - 6 tsp
- Sea salt - ¼ tsp
- Blueberries - 1 cup, fresh or frozen
Instructions
BOTTOM:
In a bowl, mix together melted butter, flour, sugar, sea salt and baking powder until combined. Then separate eggs in two bowls.
Then in a small bowl whisk egg yolk, milk and vanilla together and add to other mixture and continue mixing together until combined.
Preheat the oven to 350ºF and set timer for 18 to 20 minutes, grease square pan and add bottom mixture. Flatten down and place in oven.
TOPPING:
In another bowl add egg whites, mix with high speed blender until it foams. Then add sugar and sea salt…Continue blending together for a minute or two.
When bottom cake is ready remove from oven and top with blueberries and pour meringue over top and spread out.
Place back in the oven for another 20 minutes or until golden brown. When ready remove from oven.
Serve hot or cold! Serve with whipped cream or thick cream.
Bonita’s Tips:
Room temperature eggs for twenty minutes, before whipping egg whites.
If using frozen berries no need to thaw.

These were delicious! I was wondering if I use Partridge Berries would I have to add sugar to them, how much & how would you incorporate it!
Good Morning Dorothy and thank you for stopping by. This is a lovely recipe. For sure you can use partridgeberries but what I would do because it’s so tart. I would make a jam from the berries and add the same sugar you would for making jam. I do have a recipe coming this Sunday for making partridgeberry jam. Then after let about a cup or two come to room temp then spread over the baked cake part and and then continue on with the meringue and bake to brown off the top. I hope this helps and enjoy to the fullest!! Bonita
