
Bow Tie Salmon Salad

If you are looking for a healthy choice salad and using a few simple ingredients and flaked cooked salmon.
You are in the right place!!

I'm using pieces of salmon that was packaged from the trimmings of the salmon. When you buy it that way you pay less but you still get that great taste and affordable meal.


Drizzle cooked noodles with EVOO to helps from sticking together while waiting to add into the bowl.

Flake the cooked salmon apart, removing any bones, or grey skin from the salmon. Toss into a bowl with the bow tie noodles.

I can just eat this salmon on its own with a nice cup of hot strong tea and a slices of Homemade Whole Wheat Bread

Ingredients
- Racconto Pasta - 2 cups, bow tie pasta
- Salmon - 1 cup, cooked and flaked
- Baby tomatoes - 10 each
- Feta cheese - ½ cup, or cheese of choice
- Celery - ¼ cup, diced
- Red onion - ¼ cup, diced
- Extra Virgin Olive Oil - ¼ cup
- Lemon juice - 1 tbsp, freshly squeezed
- Vinegar - 2 tbsp, of choice
- Mustard - 1 tbsp
- Dill - ¼ tsp
- Garlic cloves - 2 each, pressed or grated
- Onion powder - 1 tsp
- Sea salt - 1 tsp
- Black pepper - 1 tsp
- Honey - ½ tsp, or maple syrup
Instructions
In a small bowl, Whisk together all of the salad dressing ingredients: olive oil, lemon juice, vinegar, mustard, dill, garlic, onion powder, ½ tsp sea salt, pinch pepper and honey. Put in fridge to build flavours before using.
Cook salmon in your air fryer or frying pan with a pinch of sea salt and pepper to taste. Flake apart and let come to room temperature.
In a saucepan with water and ½ tsp sea salt bring to a boil and add the racconto pasta ( bow tie pasta ) cook following the cooking instructions on the bag. ( Around 9 minutes )
Dice celery and red onion, flake apart feta cheese or cheese of choice. In a fancy bowl add all ingredients and toss together.
When ready to serve add the dressing over your bow tie salmon salad and serve on its own or with a protein of choice.
Bonita’s Tips:
Cook salmon in advance to be ready to use in salad.
Make dressing in advance to build those amazing flavours together.
Add seasonings to dressing to taste.
Buy salmon pieces its cheaper then a full fillet.

Baby tomatoes, red onion, celery, feta cheese, bow tie noodles and cooked flaked salmon.

I’m using freshly air fried cooked salmon lightly seasoned with sea salt, pepper and onion powder.
You can pan fry it or use canned salmon.

Put the dressing in the fridge to build those flavours.
