Only a few simple ingredients to make our salad, this was a viewers recipe she shared with us a few months ago.
You need butternut squash, red onion, quinoa, dried cranberries and a few seasonings to bring it together.
Prepare butternut squash for roasting. Peel and cut squash in cubes, drizzle with olive oil and season with salt and pepper.

Ingredients
- Butternut squash - 1 fresh
- Red onion - 1/3 cup
- Dried cranberries - 1/3 cup
- pumpkin seeds or sunflower seeds - 3 tbsp
- Extra Virgin Olive Oil - 1 tbsp
- Red onion - 1/3 cup
- Quinoa - 1 cup uncooked
- Water - 2 cups, for cooking quinoa
Instructions
Preheat oven to 400ºF:
Peel the skin from 1 squash, cut in half lengthwise, remove the seeds and cut ends off, then cut the squash into cubes around 3/4 inch square.
Toss with with 1 tbsp. olive oil and bake on a parchment lined baking sheet for 20 to 25 minutes. You can use any squash of your choice if you don't have a butternut.
While the squash is baking, start your quinoa. You can follow the directions on the package or these directions. Rinse 1 cup uncooked quinoa and make sure there are no stones in it. Bring to boil with 2 cups water and then simmer partially covered 20 minutes.
Put the other ingredients together, 1/3 cup dried cranberries, 1/3 cup chopped red onion (or onion of your choice), 3 tbsp. Pumpkin seeds, salt and pepper in a nice bowl.
When the squash and quinoa are cooked, add these to your ingredients in the bowl and mix.
Mix the dressing:
1/4 cup olive oil, 1/4 cup balsamic vinegar, 1 tsp. Honey, 1 tsp Dijon mustard, 1 clove garlic minced, salt and pepper
Just before serving toss in the dressing with the ingredients in your bowl.

One cup of uncooked quinoa into two cups of water and a pinch of sea salt. Cook until quinoa in transparent. See package for more details to cook it!!
Topping this salad with an homemade balsamic dressing takes it to a old new level. You can pour it over all of it at once or put it in a dish for single servings.
