If you are looking for a simple and tasty recipe for CARROT SOUP you are in for a treat, our soup recipe got a delicious taste of carrots, the heat from the ginger and the favour from the garlic. So if you are interested stick around and read our blog and recipe to this tasty carrot soup!
You need these tasty veggies to start your soup, peel, chop and soak your carrots, potatoes and celery in some cold water. Then peel and chop your onion in small pieces leaving a wedge or quarter of a cup to add in with your veggies while cooking.
After vegetables are cooked remove boiler from the heat to your counter top, pour fried onions and garlic into the boiler then use a hand held blender or food processor to mix all ingredients together until creamy.

Ingredients
- Carrots - 5 medium or 2 large
- Potatoes - 3 Large, white
- Chicken or vegetable broth - 6 cups
- Onion - 1 large, diced
- Butter or margarine - 2 tbsp
- Celery - 1 stick
- White pepper - 1/2 tsp
- Sea salt - 1/2 tsp
- Thyme - 1/2 tsp, fresh or dried
- Garlic - 1 clove
- Ginger - 1 small chuck
- Turmeric - 1/4 tsp
- Cream - 1/4 cup, for garnish
- Croutons - 8 each, for garnish
Instructions
Peel and chop carrots, potatoes and celery, then put in a bowl of cold water until ready to use when ready drain water and use.
In a frying pan add butter, white pepper, thyme, chopped onion “keeping 1/4 cup to boil with veggies” fry until onion are lightly cooked. Then add garlic for the last few seconds.
In a medium boiler add broth, sea salt, 1/4 cup onion, chuck of ginger, then drain water off veggies and add to boiler, cook on a medium heat until fork tender, then remove ginger.
Then add turmeric, fried onion mixture chopped onion “keeping 1/4 cup to boil with veggies” to boiler, remove boiler from heat unto counter top, using a hand held blender mix all ingredients and broth together until creamy, or add hot veggies and broth to a food processor or blender to mix together.
After, add more white pepper or sea salt if needed, or thyme. Pour HOT soup into serving bowls and top with a swirl of cream and croutons. Serve with bread buns or sandwiches.
Nothing like a tasty bowl of soup!
If you like to keep some soup for left overs do if before you start eating, by scooping the hot soup up first and cap the bottle so the heat will lock the bottle. This soup will be good for a couple of weeks in the fridge for you to enjoy.
