CAST IRON BAKED PAN CAKE

If you like making pancake breakfasts for your family, you are going to love making them this way.
This is a recipe our oldest sons family enjoyed making and our oldest grandson is usually the cook.
But today we are giving you a simple way to make them and no fuss.

Ingredients
- All- purpose flour - 1½ cup
- Sugar - 1 tbsp
- Melted Butter or margarine - 3 tbsp
- Vanilla extract - 1 tsp
- Egg - 1 each
- Baking powder - 3½ tsp
- Sea salt - pinch
- Milk - 1¼ cups
- Blueberries - ½ cup
Instructions
In a bowl, add all-purpose flour, baking power, white sugar and pinch sea salt. Toss together.
Then add melted butter, milk, egg and vanilla. Mix until the batter is smooth and creamy.
Toss blueberries or berry of choice in a bowl with 1 tbsp flour, then fold into batter.
You will need a cast iron pan or oven safe pan, grease well before using. Pour all batter into the pan and spread out. Top with more blueberries if you wish.
Preheat the oven to 350ºf and put the pan in the middle rack and bake for 25 to 30 minutes or until toothpick clean.
When baked remove from oven unto the counter top and cover with a towel for a couple of minutes. Then with a pizza cutting slice 8 piece and serve hot with maple syrup and whipped cream. More blueberries or fruit.
Bonita’s Tips:
Use flour, sugar or milk of choice.
Use any type of berries or just make them plain.
You can use this batter in a waffle maker or flat gill.
A pinch is about ¼ of a teaspoonfuls.
Tossing berries in flour helps the berries from falling to the bottom of the pan.
Special Note: This recipe is our oldest sons family recipe and one they all like making.
