CHICKEN CHILI

If you are looking for a tasty CHICKEN CHILI recipe you are in for a wonderful treat, our homemade chicken chili is packed full of flavour and the seasonings are amazing. Ingredients
- Chicken thighs - 6 to 8 pieces, boneless and skinless, in chucks
- Mushrooms - 1 - 10oz can or fresh
- Red kidney beans - 1 - 398ml can, drain liquid
- Pasta or Tomato Sauce - 1 cup
- Diced tomatoes - 2 cups or 1 - 398 ml can with juice
- Carrot - 1 large, chopped
- Cumin - 1 tsp
- Ground chili - 2 tbsp
- Cayenne pepper - 1/2 tsp or less
- Brown sugar - 1 tbsp
- Sea salt - 1 tsp
- Black pepper - 1/2 tsp
- Onion - 1 medium, chopped
- Fresh garlic - 2 cloves, pressed or chopped
- Coloured peppers - 1/2 each, red, green, yellow
- Celery - 2 sticks, chopped
- Thyme - 1/2 tsp, fresh or ground
- Butter or margarine - 1 tbsp
- Olive oil - 1 tbsp
- Chicken or vegetable broth - 1 cup
- Onion powder - 1/2 tsp
Instructions
Start by peeling, cutting and cleaning all your veggies then measure all the seasonings you need to make your chicken chili.
Cut chicken thighs in chucks, and rinse under cold water. ( optional )
In a frying pan add butter and oil, chucks of chicken thighs and add seasonings and fry with chopped onion and sliced mushrooms for 5 to 10 minutes, on a medium heat.
In a medium boiler add tomato sauce, diced tomatoes and juice, chopped peppers, chopped or pressed garlic, chopped carrots, celery, drain juice off kidney beans and add beans to boiler.
Start to boil your sauce on a medium heat, after chicken, onions and mushrooms are fried add to boiler, stirring occasionally and placing lid half ways to let steam release.
Never leave boiler unattended and cook for around 30 to 45 minutes on medium heat, lower heat to low and let simmer until ready to serve.
