Cooked chicken is one of the main ingredients in our recipe, I like roasting a full chicken of Sunday and the rest of the week I have so many tasty meals from this one chicken.
I will share a few recipes for you to check out!
Also I'm using cooked mixed veggies and potatoes in this tasty chicken pot pie.
You also need a tasty roux for this chicken pot pie to bring it all together.
You can use poultry seasoning or a vegetable broth.

Ingredients
- Chicken - 2 cups cooked
- Onion - 1 large peel and chop
- Chicken broth - 2 cups, or vegetable
- Chicken drippings - ½ cup, or poultry seasonings
- Butter - 2 tbsp
- Flour - 2 tbsp
- Mixed vegetables - 2 cups, carrot, peas, potato and corn
- Sea salt - 1 tsp
- Black pepper - ½ tsp
- Onion powder - 1 tsp
- Egg - 1 large
Instructions
Method for Chicken Filling:
This recipe calls for cooked chicken and part cooked mixed veggies. You can use fresh vegetables cut in small pieces or use frozen mixed veggies.
Chop cooked chicken in small pieces and if you are using fresh vegetables, cook them with a pinch of sea salt, and drain liquid off. But keep this recipe or another one.
In a large frying pan add butter and chopped onion, fry for 5 to 10 minutes until onions are transparent.
Add sea salt, pepper and onion powder and fold in.
Then add flour, mix until pasty, then top with one cup chicken broth and ½ of the chicken drippings leaving some for gravy.
Mix until it starts to thicken, add chopped chicken and vegetables and fold together.

Then continue on making chicken pot pie, put one pastry at the bottom of a greased pie pan or cast iron pan.
Then top with all the chicken mixture. After putting pastry on top and pinch all around to close dough. Then cut a hole in the top or poke fork holes in top. Crack egg in bowl and whisk together and brush over top of pastry.
Preheat the oven to 375ºF and bake for 35 minutes or longer if needed.
Pastry Recipe:
2 cup white or wheat flour ½ cup Cold Butter
½ tsp salt ½ cup cold water
Method for Pastry:
Mix flour, butter ( chop in pieces) and salt together in a bowl mix with your hand or food processor when mixed, add water mix until it shapes into a ball then remove from bowl/mixer.
Put dough on the counter and sprinkle with flour then cut the ball into 2 pieces for top and bottom for one chicken pot pie or 6 pieces to make single servings.
Roll out pastry for whatever size of pie you are making.

GRAVY:
In a pan add 2 tbsp butter, let melt, add 2 tbsp flour, mix until pasty. Then add 1 or 2 cups of chicken or veggie broth, then chicken drippings. Pinch sea salt, pepper and onion powder to taste. Mix until thicken and serve over single servings of chicken pot pie.
Serve with toss salad or more veggies….

So many lovely ways to make a chicken pot pie, our method is using your leftovers and having everything cooked before putting it inside your pastry.
After cutting pastry in half roll out both, one for the bottom of pan and one for the top.
Roll the pastry thin, then after putting them in the pan poke holes in the dough with a fork.
