Chocolate Cheesecake Squares

These tasty chocolate cheesecake squares are a spine between chocolate chip cookies with cheesecake topping and covered in a silky coat of chocolate.
Mostly basic ingredient's in this recipe and most you will have already in your pantry, measure out the ingredient's first before making this dessert and it will help keep it organized.
In a bowl add melted or soft butter, sugar and blend together. Toss in the whisked egg and vanilla before tossing in the dry ingredient's.
Toss the dry ingredient's together and just for a few second mix it together. It will be a crumble texture when completed.
Next in another bowl, add cream cheese, sugar and vanilla. Mix until creamed together then add egg. Mix together only until combined, add to the top of the base mixture in the pan then spread evenly.
Spread over the crumble base and bake in a 350ºf oven for 45 to 50 minutes....or until golden brown!!

Ingredients
- Recipe for Crust:
- All- purpose flour - 2 cups
- Baking soda - ½ tsp
- Butter or margarine - ½ cup
- Brown sugar - ½ cup, packed
- Egg - 1 large
- Vanilla extract - 1 tsp
- Chocolate chips - 1½ cups, 225g
- Sea salt - ¼ tsp
- Recipe for Filling:
- Cream cheese - 1 (8oz) pack
- Egg - 1 large
- White granulated sugar - ¼ cup
- Vanilla extract - 1 tsp
Instructions
Preheat oven to 350ºF - 1 square pan lined with parchment paper leaving a little overhang to pull cookies out of the pan.
In a bowl toss together flour, baking soda and sea salt.
Then in another bowl, cream together butter and sugar until fluffy. Then crack an egg in a separate small bowl to check it, then whisk in vanilla.
Add dry ingredient’s to wet until incorporated. This is a crumble type mixture.
Fold in ½ cup chocolate chips and press all the mixture into bottom of the lined pan.
Then in another bowl combined all filling ingredient’s and beat until all blended, spread over bottom layer.
Bake for 45 to 50 minutes or until golden brown. Remove from oven and turn off oven, then sprinkle the 1 cup of chocolate chips or chucks over the top of the cooked layer and put back into the oven for 1 or 2 minutes to melt.
Remove from oven and spread the chocolate with flat spatula, make three lines 1½ inches apart one way, then turn and do the same the other way…Like a X in O board. After let come to room temperature, then put in the fridge to harden before cutting down those lines into squares.
Bonita’s Tips:
Store in a container with lid in the fridge after cutting until all eaten.
Freeze them for longer storage and remove as needed.
Turning oven off, then putting the pan back with the chocolate is a easy way to melt and spread the chocolate with out clumping.
Light cream cheese is softer to use.

Now!! After the chocolate have melted in the oven for 2 minutes just with the heat off and the door up……remove from the oven and spread it out evenly..
Not many steps to this dessert, but if you wish you can cut them with the chocolate not sat….
But it’s best to wait until it’s sat and hardened to cut easier and not as messy.
