Chocolate Jelly Roll

Our recipe is an homemade chocolate jelly roll, this is a old fashion recipe and a cake my mom would have for Sunday's years ago. Usually we would have a Traditional Newfoundland Cold Plates for supper and then dessert would be jelly roll or Traditional Newfoundland Orange Jelly Salad
Just mix the eggs with a high speed blender first and then add hot water, and gradually add sugar while continuing blending on a high speed. After fold the flour, baking powder and cocoa powder together with a spoon or whisk.
Line a cookies sheet with parchment paper and add all the cake batter and pre-heat your oven to 400ºF and bake for 10 to 12 minutes, then remove for oven.
When the cake comes out of the oven tip it out QUICKLY unto the confectionary sugar and towel, then slowly pull back the parchment paper to remove it.

If you like to have only a cream cheese icing for the inside or outside this is what it will look like. I love both of them. Our video only got the jelly roll with the jam but make two. 🙂

Ingredients
- All-Purpose Flour - 1 cup
- Sugar - 1 cup
- Hot water - 5 tbsp
- Baking powder - 1 tsp
- Cocoa Powder - 3 tbsp
- Eggs - 3 large
- Confectionary sugar - 1/4 cup
Instructions
Method:
In a medium bowl beat together the eggs until very fluffy.
Slowly add the sugar beat until stiff and shiny look, add water.
Mix together flour and baking powder, then sift over egg and sugar mixture, then add cocoa powder and fold together until all combined.
Add to cookie sheet 15 x 10 x 1 lined with parchment paper, equally spread over.
Pre-heat oven to 400ºf and bake for 10 minutes more if needed.
After baked remove from oven and turn out on a towel dusted with icing sugar “ confectionary sugar” remove parchment paper, after remove any crisp edges to even the cake.
While HOT roll in towel starting at to narrow end, when jelly roll is at room temperature unroll and spread filling or jam of choice.
BONITA’S TIPS:
Sifting flour softens it like cake mix, folding the batter It means that you have to carefully combine two mixtures of different thickness and weight into one (relatively) smooth mixture.
If you wish to make a light jelly roll DON’T add the cocoa powder.
Allergens
This is a easy to make cake and one the whole family will love, you can change up the filling with whatever your family enjoys to eat. Like chocolate icing, lemon, strawberry, blueberry or peach jelly or jam.
Just spread the jelly over the inside of the cake evenly and start to roll closes to you again. Only the cake this time you roll forward until all the cake is rolled.
Then cut off any rough edges or burnt cake from the sides to clean it up nice, then top with icing sugar or confectionary sugar. I have a lovely BOILED Icing recipe with our Rhubarb Muffins and Boiled Icing
