Chocolate Mice Cookies
Hi and thank you for stopping by, we hope you are looking for your childhood recipe for CHOCOLATE MICE COOKIES, also known as PEANUT BUTTER BALLS. These are so lovely and easy to make. Whats so good about these you can have crunchy peanut butter or smooth whatever you enjoys, after add all the ingredients together and blend.
You can use the bakers chocolate or chocolate chips works for dipping the mice cookies or peanut butter balls, melt in a double boiler with the glass bowl at the top and saucepan with two cups of water in it. Medium heat and boil until all chocolate have melted and keep mixing until its all melted.
Shape the peanut mixture into oval or round shapes, place on a plate with parchment paper and put in the fridge to cool for 10 minutes. After melt dark or light chocolate in a double boiler with water in the saucepan and a glass bowl that fits snug on top. When melted start dipping the mice cookies and place back on the plate with parchment paper and put back in the fridge to harden, then enjoy to the fullest.......if you wish to store them for a longer time freeze in a container with lid.

Ingredients
- Peanut butter - 1 cup
- Confectionary sugar - 1 cup
- Rice krispies - 2 cups
- Coconut - 1 cup
- Walnuts - 1/4 cup, chopped
- Butter or margarine - 1/4 cup
- Chocolate Chips or bakers chocolate - 1 or 2 packs
- Water - 2 cups for saucepan
Instructions
- In a medium bowl add peanut butter, butter, confectionary sugar, coconut, chopped walnuts mix together well then fold in rice krispies.
- Then scoop about 2 tbsp of mixture or more into your hand and form a egg shape mice cookie, then place on a plate until all of your mixture is gone.
- Put plate in fridge to cool down the peanut butter for 5 to 10 minutes.
- In a saucepan with 2 cups water, start to boil, you will need a heat proof glass bowl to place on the saucepan to make a double boiler, add chocolate of choice and let melt stirring occasionally.
- Remove mice cookies or peanut butter balls from the fridge and dip each one in chocolate to coat and place back onto the plate to set. Keep doing this until all complete.
- Store when sat in a plastic container refrigerate or freeze until ready to serve them.
