Main ingredient is potato and any type will work great!
You will need a nice fresh bell pepper any colour and type, rinse with water then cut into small pieces!
Just look at these basic ingredient's to make your Chunky Hot Potato Salad.

Ingredients
- Onion - 1 small, peeled and chopped
- White vinegar - ¼ cup
- Cooked potatoes - 4 to 6 cups, diced
- Coloured bell peppers - 1 chopped
- Sea salt - 1 tsp
- Black or white pepper - ½ to 1 tsp
- Egg - 2 large
- Butter or margarine - 2 tbsp
- Olive oil - 1 tbsp
- Sugar - 1 tsp
- Onion powder - 1 tsp
- Green onion - 2 sticks, chopped
- Parsley - garnish
- Paprika - garnish
Instructions
Peel and dice potatoes put in a bowl of cold water for 5 minutes to remove some starch. Then put in a pot of hot water with a pinch sea salt, start to boil on medium heat until fork tender, then drain water off. Hard boil one large egg to cut in cubes for this salad.
Next fry chopped onions and coloured peppers lightly in butter or oil, until tender.
Add vinegar, sea salt, pepper and sugar, cook for another few minutes. Then crack your eggs in a bowl whisk with a fork.
Then add a scoop of the onion and peppers mixture to the beaten eggs, whisk with the fork a little.
Pour back into the pan and blend well together, then add hot diced potatoes, mix lightly and lower heat. Crack, peel and dice hard boiled egg to top over salad.
Remove from heat and scoop the hot potato salad into a serving bowl, then garnish with green onion and serve with fresh bread, pickles and a hot cup of tea.
Bonita’s Tips:
You can chop to hard boiled eggs in this salad for taste and texture, so good. Use pickled eggs or regular boiled eggs.
Soaking the potatoes for five minutes or longer removes starch from the potatoes.
Serve with protein of choice or on it’s own.
