CHUNKY POTATO & BACON SALAD

If you are looking for a tasty potato salad to make for your supper or pot luck event!!!
THIS IS IT!!
Did anyone say bacon!!!
I'm using one cup of fried crispy bacon for this recipe but you can use more!!! Fry the bacon until crispy and then chop in some bite size pieces!!
Peel and boil potatoes in a saucepan of water and half teaspoonful of sea salt!!
Until fork tender..
Hard boiled eggs, mayo, mustard and celery is a few of the ingredient's i'm using in our salad.
I'm using a sweet macintosh apples, but you use the apple you love eating!!
Just give your boiled potatoes a rough chop and toss all the other ingredient's in the bowl.

Ingredients
- Potatoes - 5 medium
- Crispy bacon bits - ½ cup
- Onion - 1 medium
- Green onion - 2 sticks
- Mayo or miracle whip - ½ cup
- Mustard - 2 tbsp
- Sea salt - ½ tsp
- Black or White Pepper - ½ tsp
- Boiled eggs - 2 large, hard
- Apples - 2 each
- Lemon wedge - 1 piece
- Paprika - pinch for top garnish
- Celery - 1 stick
Instructions
Peel and chuck potatoes, then put in a bowl of cold water to soak for 5 minutes to remove some starch. Then in a medium saucepan add water, sea salt, then potato chucks. Peel onion, cut in half then add to saucepan with potatoes while cooking.
Let cook until fork tender.
Chop celery in small pieces, boil two eggs until hard boiled. Chop two sticks of green onion in pieces. Peel and cut your apples in chucks. Then toss in small bowl with a tablespoon of lemon juice.
When potatoes are cooked drain water off, add potatoes to a large bowl let them come to room temperature.
Then peel and chop eggs in chucks, add to bowl. After add all of the other ingredient’s and toss together.
Taste the potato salad to see if you need more seasonings, mayo, mustard to taste…
Then transfer the potato salad into a fancy bowl and top with a pinch of paprika.
Cover with clear wrap and refrigerate until ready to serve. Salad is good for five days keep in fridge at all time.
Bonita’s Tips:
White potatoes got more starch then red potatoes but red potatoes are sweeter. Use other one.
Use mayo or miracle whip to taste.
Use onion powder if you don’t like green onion.
The lemon juice over the apple will keep them from turning brown.
Allergens
This salad can be served on it’s own as a starter or with a full meal or cold plate dinner. The salad after made can be covered in clear wrap and kept in the fridge up to a week.
