Having fresh homemade bread is wonderful, finding time to make it is hard.
But believe you me, I have been where you are and making time for the things you love to do is a must!
Maybe you have a day off and you plan to make this recipe start first thing in the morning, make your dough cover it and put in a warm place in your kitchen, then forget about it. Go and spend family time or a quick run to the store or mail, the dough is going to be there when you return.
Then wash up and knead your dough down, cover it and forget about it again, you have 30 minutes to kill. Thats whats so lovely about this, remember cooking and baking shouldn't be a trouble or stressful.
Whats so amazing about making bread you get to experience how lovely it is to work with dough, I have been working with dough for over 40 years. Ingredients
- White flour - 8½ cups
- Yeast - 2 tbsp
- Butter or margarine - 2 tbsp or more if needed
- Salt - ½ tsp
- Sugar - 2 tbsp white
- Warm Water - 3 cups, more if needed
- Method for cinnamon raisin:
- Brown sugar - 1 cup
- Raisins - ½ cup, more if needed
- Cinnamon - ¼ cup
- Butter - ¼ cup melted or more
Instructions
Method for dough:
WHITE BREAD
Ingredients:
8 1/2 Cups, White flour
2 Tbsp, yeast, traditional or fast rising
2 Tbsp, melted butter or margarine, plus extra for hands and pans
1/2 to 1 Tsp, Sea salt
2 Tbsp, sugar
3 Cups, warm water, MORE IF NEEDED
Prep time: 10 minutes, Mixing time: 10 minutes, Rising time: 3 stages at 30 minutes each, Baking time: 30 to 35 minutes
Method:
• Combine in large bowl: 8 cups flour, 1 tbsp sugar and 1/2 to 1 tsp salt, mix together.
• In another bowl, add dry fast rising or traditional yeast with 3 cups warm water and 1 tbsp sugar, Let rise for about 5 minutes.
• In another bowl melt butter or margarine.
• In flour mixture make an hole in the middle to pour your yeast and warm water and butter, mixing all ingredients together with a wooden spoon or kitchen aid until it thickens, then keep adding 1/2 cup of flour to work dough together.
• ( If you need to add more warm water this should be done during the mixing stage.)
• This can be done with your hand or kitchen aide with a hook.
• Knead dough, add more flour if necessary until dough is smooth, elastic and no longer sticky and you can hear cracking of the dough when folding dough. Keep working dough into a ball.
• When completed sprinkle some flour over the top of dough, then cover with a piece of parchment paper and a towel.
• Let dough rise in a warm place until dough rises for 30 minutes then knead it down.
• Repeat this step letting the dough rise again for another 30 minutes, after risen don’t deflate dough before cutting it.
• After your dough rises, cut in small pieces forming it inwards into a ball 6.4 oz, then place in your bread pans. Make three buns in one pan, you can also have some dough to make 1 full loaf of bread or bread buns, tray of 10 each of 1.7 oz, or Toutons / bankers small flat pieces of dough.
• Makes 3 loafs of bread, one tray of bread buns, keep covered and in a warm place until bread rises half the size you started with, but only for 30 minutes.
• Pre-heat oven at 350 degrees F, bake bread for 30 to 35 minutes or until golden brown, depending on your oven, when bread is baked remove from oven and take out of your pans and place it out on a (cooling rack). This prevents bread from getting moist on the bottom.
Glaze bread with butter or margarine, cover with a towel, serve hot or cold.
BAKERS TIPS:
- After bread cools put them in plastic bags and freeze, this will keep bread soft and fresh when thawed
- I always mark the sign of a cross a few times on top of the dough, then cut the top of the dough like a cross to see texture. Crossing your bread is optional, this is an old NL tradition

Ingredients for Cinnamon Filling:
1 Cup, Brown Sugar
1/2 Cup, Raisins more if needed
1/4 Cup, Cinnamon
1/4 Cup, melted butter and extra if needed
Method:
First see white bread recipe method to make our delicious cinnamon raisin bread and then continue on with the method below.
In a small bowl mix the top three ingredients together, set aside until ready to use.
- After your white bread dough rises, cut in three pieces and flatten on your cutting board with a dusting of flour, with your finger or rolling pin spread the dough out as far as it can go.
- Then sprinkle equal amounts of cinnamon, raisins and brown sugar over the flatten dough, then drizzle melted butter evenly over ingredients, after roll the dough away from you and then put the dough roll in your bread pans.
- Continue doing this with the dough, it makes 3 loafs of bread, place bread pans in warm spot in your kitchen and cover with a sheet of parchment paper and large towel until dough rises half the size you started with or for about 20 to 30 minutes.
- Preheat oven at 350 degrees F, bake bread for 30 minutes or until golden brown, when baked take out of your pans and place then out on a cooling rack.
- Glaze bread with some butter and cover with the sheet of parchment paper and towel to soften bread.
BAKING TIPS:
- Placing bread on a cooling rack this prevents bread from getting moist on the bottom.
- Let bread cool totally before bagging, freeze to keep bread fresh longer.
Recipe for Toutons/bankers if you have extra dough:
- Cut small pieces of dough and pull apart to make a flat dough, preheat you frying pan to medium heat add 1 tbsp butter and 1 tbsp olive oil.
- place about pieces of flat dough in pan let fry for about 4 to 5 minutes on each side remove from pan and enjoy.

Whats so wonderful about this recipe you are making two recipes with one pan of dough, now who don’t like that. Years ago in most communities in Newfoundland and Labrador, people would make bread everyday, sometime twice a day. Having access to making more then one meal out of a recipe was very important for people. We also made another meal out of our dough called toutons also called bankers, they are so delicious.
This is made by frying pieces of the flat dough in oil and butter, I will share a picture of it for you and the link to our homemade white bread with the toutons recipe at the end.
