Look no more, we have a tasty and very affordable coconut recipe here for you to make in a short time.
Unsweetened coconut is the only ingredient you may have to buy....because everything else you will have at home.
Seven ingredient's you will need to make this tasty dessert!!!
This will be the filling ingredient's, eggs, sugar, flour, baking powder and coconut!
If you wish you can add some coconut into the crust ingredient's and it will be lovely!!

Ingredients
- FILLING:
- Unsweetened coconut - 1 cup
- White or brown sugar - ¾ cup
- Eggs - 2 large
- All- purpose flour - 2 tbsp
- Baking powder - 1½ tsp
- CRUST:
- All-purpose flour - 2 cups
- White sugar - 2 tbsp
- Butter or margarine - ½ cup
- GARNISH:
- Confectioners sugar - ¼ cup
Instructions
You will need a 8 x 8 inch pan lined with parchment paper or greased.
Then in a bowl add filling ingredients starting with two eggs and beat for a few seconds.
Then add sugar, flour, baking powder and continue mixing, fold in the unsweetened coconut.
In another bowl add crust ingredients, melt butter for 30 seconds, then add in sugar and all-purpose flour. Toss together just until all ingredients are blended….
In the prepared pan add the crust mixture and flatten, then pour all filling mixture over the top and preheat your oven to 350ºF and put the pan in the middle rack and bake for 20 to 30 minutes. Until golden brown!!
Remove from heat and place on a cork or grate and toss some confectioners sugar over top then let come to room temperature before cutting any size you like.
Serve with a cup of tea or on it’s own.
