COCONUT MACAROONS

You can mix all of these ingredient's together by hand and a wooden spoon or use a standup mixer.
Toss in a bowl, flour, unsweetened shredded coconut and sea salt, mix together for a minute. Then toss in the liquid ingredient's. Sweetened condensed milk, vanilla and almond extract and continue mixing it together.
Line a cookie sheet with a piece of parchment paper and dollop one tablespoon of mixture 1 to 2" apart and continue doing this until all mixture in gone.
Look how lovely those little coconut macaroons are!!!

Ingredients
- Unsweetened shredded coconut - 4½ cups
- All-purpose flour - 2/3 cup
- Vanilla extract - 1 tsp
- Almond extract - 1 tsp
- Sweetened Condensed Milk - 1 (14oz) can
- Sea salt - ¼ tsp
Instructions
Preheat oven to 350ºF - Bake Time 12 to 15 minutes - Two cookie sheets with parchment paper
Measure ingredient’s and open can before you start.
In a large bowl, toss in coconut, flour and sea salt toss until coated. Then pour in sweetened condensed milk and both extracts.
With a spoon or spatular mix all ingredient’s together until all combined.
Then scoop heaping tablespoons of mixture and put on your prepared pans, leaving them around 1” to 2” apart.
After place in the preheated oven on the middle rack and bake, until golden brown or around 12 to 15 minutes.
When ready remove from oven and let come to total room temperature before eating, mixture will be hot and can burn your mouth.
(OPTIONAL)
Melt some unsweetened chocolate or chocolate chips to dip the bottom of the coconut macaroons on. Flip over so chocolate cools.
Bonita’s Tips:
Using unsweetened shredded coconut cuts down on the amount of sugar in this recipe.
Having a pinch of sea salt gives it a nice blend of sweet and salty.
Using unsweetened chocolate also removes the amount of sugar added to this recipe. (optional)
Allergens
Melt some dark or light chocolate in a double boiler or microwave for 30 seconds or until melted.
Dip the bottom of the coconut macaroon in melted chocolate and place on it’s side to set!!
