COCONUT PARTRIDGEBERRY SQUARES

If you don't have partridgeberry jam you can use cranberry jam, or a jam of choice!
Traditional Newfoundland Partridgeberry Jam
In another bowl, add egg whites and blend together until nice and firm. Then start adding in other ingredients like, packed brown sugar, vanilla and unsweetened coconut.

Ingredients
- White sugar - ¼ cup
- Butter or margarine - ¾ cup
- Egg whites - 2 large
- All-Purpose Flour - 1½ cups
- Brown sugar - ¾ cup
- Vanilla extract - 1 tsp
- Sea salt - ½ tsp
- Unsweetened coconut - 1 cup
- Partridgeberry jam - 1 cup, jam of choice
Instructions
In a medium bowl, cream together butter and white sugar, then add flour and sea salt, mix together until all combined.
Line a 9 x 9 inch pan with parchment paper, then spread flour mixture evenly in the pan. Then evenly spread one cup or more of partridgeberry jam over uncooked crust, or use jam of choice.
After in another bowl, add two egg whites and whisk until it starts to form a stiff peak. After adding brown sugar, vanilla, continue mixing until all combined. Then fold in the unsweetened coconut well.
Spread egg mixture over partridgeberry jam or jam of choice, preheat the oven to 350ºF and bake coconut squares for 30 to 35 minutes or until golden brown.
When baked, remove from heat and let cool. Then remove parchment paper from the pan and place on the counter, then cut into squares. Enjoy
Bonita’s Tips:
Use jam or filling of choice, I’m using homemade partridgeberry jam….
Cream butter and sugar with a mixer or by hand.
Having the pan lined with parchment paper, will help take the coconut squares from the pan easier.
Allergens
Spread egg whites mixture evenly over partridgeberry jam in pan, then preheat oven to 350ºf when ready place the pan in the middle rack.
So tasty, and let cool totally before you cut in squares.
