
Codfish and Stuffing Meal

I did say a very tasty and healthy meal because there is no additives or extra amount of oils, just a few simple ingredients we all have in our homes.


Grate the onion first before adding it to the stale bread crumbs, this will give the crumbs some moisture and blend all the ingredients together well and the taste is amazing.

I use basic seasonings like sea salt, pepper and onion powder to this meal.

Ingredients
- Cod fillets - 4 to 6 pieces, or white fish of choice
- Potatoes - 3 each, sliced thin
- Onion - 1 medium, grated
- Savoury or Summer Savoury - 2 tsp
- Butter or margarine - 1 tbsp, soft
- Black pepper - 1 tsp
- Sea salt - 1 tsp
- Onion powder - 1 tsp
- Olive oil - 1 tbsp
- Stale bread crumbs - 2½ to 3 cups
Instructions
Clean and dry your cod fillets, only use deboned cod.
In a medium bowl, add your stale bread crumbs, 1 tbsp butter, savoury, grated medium onion and half teaspoon of salt and pepper. Mix all together with your hands until everything is blended together.
Get a casserole dish or small roaster with cover or use foil wrap, drizzle olive oil at the bottom, start adding a layer of sliced potatoes, 1 tbsp melted butter drizzled or olive oil over potatoes and add cod fillets on top of potatoes, drizzle with olive oil, the other half teaspoon of salt and pepper, then a layer of dressing ( stuffing).
Preheat oven to 350ºF, put dish on middle rack in the oven and bake for 30 minutes covered. Then 30 minutes uncovered or until golden brown, or until 145ºf.
When baked remove from oven serve with fresh steamed veggies, or a side of toss salad.
Bonita’s Tips:
Use stale bread leftover and grate in small crumbs, keep them in the freezer to use for meals like this or stuffing for your chicken.
Use onion powder if you can’t eat fresh onion in stuffing.
Cut potato in ever thin slices.

Make this recipe in a longer pan or roaster if you like to make more, serve with steamed veggies and a toss salad to have a healthier choice.

Grease pan, layer thin sliced potatoes, top with a drizzle of olive oil, sea salt, pepper and onion powder to season all layers.

Season the cod fillets with sea salt, pepper and onion powder just a pinch…then top the codfish with the homemade stuffing ( dressing )!
