CORN and BEET Salad

If you are looking for a tasty corn and beet salad look no more!!!
This recipe is so easy to make and full of fresh garden veggies but you can use frozen corn or pickled beet.
Eat with any protein or on it's own or with your cold plate dinner.
Pickled Beets-Traditional Newfoundland
Use fresh or pickled beets for this salad, cut in small cubes...
This salad with keep in your fridge up to a week just enjoying a taste everyday!!!

Ingredients
- Corn - 3 or 4 cups, fresh or frozen
- Beets - 2 cups, fresh or pickled
- Apples - 2 each of choice
- Celery sticks - 2 cut in cubes
- Mayo or miracle whip - 3 tbsp, more if needed
- Sea salt - ½ tsp
- Onion powder - ½ tsp
- White or black pepper - ½ tsp
- White vinegar - 2 tbsp
- Green onion - 1 stick, thin slices
- sugar - ¼ tsp
- Paprika - ½ tsp, for garnish
Instructions
Cook in separate boilers corn and beets with water and a pinch of sea salt. Cook corn for 10 minutes. Then wash beets with skin on and add to hot water in boiler and cook until fork tender.
When beets are cooked peels skin off and cut in cubes.
If using pickled beets, remove from pickle and cut in cubes. “I will share a link to how to make pickled beet!”
When corn is cooked drain and add to bowl, then cut celery, green onions in small pieces. Then peel and cut apples in cubes, then add to bowl.
Top with all seasonings and vinegar if you are NOT using pickled beets.
Add mayo or miracle whip and toss together, then put into a nice serving bowl and top with paprika and more sliced green onion.
Serve with your COLD PLATES, that’s a traditional NL meal, I will share a link for you to see.

Use fresh, frozen or canned corn for this recipe.
Use pickled beets for bigger and bolder flavours or freshly grown beets and cook. See method above!!

I grew beets once. I think I harvested 20. Each about one inch in diameter. Enough for a serving for myself and a friend. I love beets. I bought them from the grocers from then on. Also just watched your video on Apple spice jelly. I grew an apple tree once. And a peach tree. Never did get any peaches. Apple tree did ok. I was very proud of the applesauce I made. Decided to try my hand at canning. Oh yes, sterilized the jars and lids. About a week after I stored them, I noticed the applesauce was foaming in the jars. I guess I didn’t do the process correctly. Cut the trees down. I did pretty good at raspberries and strawberries for awhile. Strawberries still ok. I go to a farm to pick raspberries and marionberries. Although I haven’t done that for a couple years. I did ok with zucchini once. This year was several little pear tomatoes and lemon cucumbers. Just thought I’d share. Take care. Marion in Oregon
