CORNED BEEF CASSEROLE

If you are wondering what to make for supper, you are in the right place. We have a tasty recipe and video tutorial to follow for CORNED BEEF CASSEROLE made with simple ingredients and tasty veggies, then topped with tomato soup and broth mixed.
Layering them in the dish then topping with some chopped corned beef, then the very last step is tomato soup and broth mixed and poured over the top of the meal.
This meal can be cooked three ways, one in the Oven on 350ºF for 2 hours or less, then cooked in the slow cooker on LOW for all day, then last cooked on the BBQ top in a roaster covered for one hour or more.
This is a tasty meal for any day of the week or season, because you can cook this meal inside or outside.

Ingredients
- Carrots - 4 each, peeled and sliced
- Onions - 2 medium, peeled and sliced
- Potatoes - 5 or 6 each, peeled and sliced
- Cabbage - ¼ head, shredded
- Tomato Soup - 1 can
- Water or Broth - 1 cup to rince can
- Corned Beef - 1 can, 340g or leftover corned beef
- Sea salt - ½ tsp
- Pepper - ½ tsp
- Onion powder - ½ tsp
Instructions
Method:
Peel all vegetables and slice and chop then soak in a bowl of cold water, then open can of corned beef and chop in chucks, open can tomato soup pour in bowl and rinse can with cold water or broth then pour in the same bowl and mix together.
You will need a casserole dish with lid 9 x 13 inch pan or foil wrap or roaster with lid, start layering all veggies and corned beef.
Start with carrots, onion and shredded cabbage, ¼ of the corned beef, then top with potatoes and seasoning in between with sea salt, pepper and onion powder.
After top with tomato soup mixture, season again with sea salt, pepper and onion powder, then cover with lid or foil wrap.
Preheat oven to 350ºF and bake corned beef casserole for 2 hours, when cooked remove and serve with fresh bread rolls or bread sticks and a side of sour cream.
Bonita’s Tips:
- Cook also in the slow cooker on low.
- Cook on the BBQ with a roaster with lid and on the inside of the BBQ on low to medium heat for 1 hour more if needed.
- Use left over corned beef or canned corned beef.

Re: CORNED BEEF CASSEROLE…Bonita if I used cubed cooked chicken in place of Corned Beef…should I use cream of chicken (plus water or broth) AND not tomato soup?

Your Corned Beef casserole has been a regular in my home for some time now. I have always made it exactly as your recipe directs, until today.
For many years I have cooked my potatoes with skins on. I just wash them good before cooking them. I even cook them with skins for mashed potatoes, and mash up the skins along with the rest of the tuber. So when I made your casserole today, I decided not to peel them, and simply slice them in their jackets. I just wanted to let you know, the dish was just as delicious today, as always. Just a slight twist on your already excellent casserole.
