It's made with canned corned beef but you can use sliced corned beef chopped in small pieces as well. Waking up to this meal will jump start your day!

Some people don't like canned corned beef and that is totally ok, but use roasted corned beef slices to make this same meal. Please continue on to more details to make our recipe today...
One small grated onion is more then enough for our recipe but use more if you wish.
Trim off any extra fat thats on the corned beef and discard.
This is a recipe for 4 people but you can make it for more just add more eggs....

Ingredients
- Corned Beef - ½ can, chopped (340g)
- Large eggs - 4 each
- Potatoes - 2 small, cubed
- Onion - 1 small, grated
- Cream or milk - ¾ cup
- Black or White Pepper - ½ tsp
- Onion powder - ½ tsp
- Sea salt - ½ tsp, (optional)
- Tomato - ¼ chopped
- Green pepper - ¼ chopped
- Red pepper - ¼ chopped
- Shredded cheese - 1 cup
Instructions
Crack eggs and put into a bowl, whisk together with milk or cream, onion powder, (sea salt) optional and pepper.
Then pour into slow cooker bowl, add chopped green and red peppers, grated onion, and chopped corned beef, tomato chopped.
Fold all ingredients together, the peel and clean potato and cut into cubes soak in a bowl of cold water for 10 minutes to remove any starch.
Then drain water off potatoes and toss diced potatoes into slow cooker bowl. Then fold them together with the other ingredients.
Turn slow cooker on low and cook for 6 to 8 hours, if you are making them for breakfast put all ingredients in slow cooker before bedtime and keep on the counter top or stove top. The last 10 minutes before serving add shredded cheese of choice and cover. You can also bake this meal on a 350ºF preheated oven and cook for 45 to 60 minutes.
Serve with bacon or sausages and toast.
I’ve grown up with having corned beef meals here in Newfoundland and Labrador, our parents would make corned beef hash, cakes and layered meals using corned beef.

Layer the ingredients and then pour the mixed eggs in milk into the bowl with the other ingredients and fold together. Add more seasonings if you wish outside of the pepper and onion powder.
Salt is optional!
