Cream of Corn Soup

Ingredients
- Corn - 3 - 4 cups fresh or frozen
- Crispy bacon bits - 1/2 cup, extra for garnish
- Vegetable Broth - 4 cups
- White pepper - 1/2 - 1 tsp
- Sea salt - 1 tsp
- Garlic Cloves - 2 cloves, grated
- Evaporated Milk - 1 cup, or milk of choice
- Onion - 2 Medium, chopped
- Potatoes - 3 - 4 medium, chopped
- Carrots - 2 medium, chopped
- Parsnips - 2 small, chopped
- Turnip - 1/2 small, chopped
- Celery - 2 - 3 sticks, chopped
- Green onion - for garnish
- Olive oil - 1 tbsp
- Butter - 2 tbsp
- Flour - 3 tbsp
Instructions
1. Sauté chopped onions in butter and oil until tender and transparent but not golden brown, add flour cook for a minute then add one cup evaporated milk and one cup veggie broth stir until thicken. Keep on simmer until ready to use.
2. In a large boiler with lid, turn burner on a medium heat add three cups of veggie broth or hot water, let start to boil.
3. Peel and chop potatoes, carrots, parsnip, turnip and celery put in a bowl of cold water until ready to use, when broth is boiled and ready, drain water off veggies and add to boiler with sea salt, pepper and garlic boil 5 minutes. After add frozen or fresh corn, cook for 5 to 10 minutes, then add your sautéed onions and mixture then boil for 5 minutes.
6. When soup starts to boil again, add 1 tbsp butter then crispy bacon bits, stir in and simmer until ready to serve.
Keep on low heat to stay warm, at this point you can taste to see if you need to add any more seasoning.
Top with parsley or green onion, or toppings of choice.
Serve with fresh bread, rolls or potato biscuits.

Just a little simmer on the rue you don’t want to over cook the cream.
