CREAMED CRAB SANDWICH

If you are looking for a tasty creamed crab sandwich or a crab meal idea, you are in the right place. This recipe is only a few minutes to make and if you are using freshly cooked crab meat or canned crab it would be equally as delicious!

Of course you know freshly cooked crab meat is the best but not always better, you can make this sandwich with one or the other and still enjoy it.....
Not a lot of work to this recipe but its so tasty, years ago our elders would make this one for a quick and easy meal but they didn't use cheese only made the roux and added the crab meat....so tasty!

Ingredients
- Crab Meat - 1 cup, freshly cooked or canned
- Flour - 2 tbsp
- Butter or margarine - 2 tbsp
- Sea salt - ½ tsp
- Evaporated Milk or cream - ½ cup
- Shredded Chedder Cheese - 1 cup, sharp or mild
- Black or White Pepper - ½ tsp
- Parmesan Cheese - 2 tbsp
- Bread or buns - 4 to 6 slices
- Onion powder - 1 tsp
Instructions
In a medium saucepan melt butter, add flour, sea salt, onion powder and black pepper and mix together until flour is cooked.
Then pour evaporated milk and water slowly to the flour paste and continue mixing until it starts to thicken and reduce heat, top with cheese and toss together.
Add cooked crab or canned crab and toss together just to coat with the tasty creamed sauce.
Toast bread and lightly butter, top with creamed crab mixture and serve hot, topped with parmesan cheese, put in the toaster oven or grill to brown if desired.
Serve over streamed rice and veggies.
Cooking Crab Legs
Half full your boiler with water, start to boil and add 1 tsp sea salt to water and then your crab legs. If crab legs are freshly got from the market and uncooked, cook for 8 to 10 minutes, only until the crab meat is pink, not over cooked. If reheating crab legs from a previous cook just 4 to 5 minutes will work great.

A gentleman from Nova Scotia drives down here to southern Ontario. He has a small covered pickup truck with a freezer in the back. His produce is great to have on hand. I must ask if he has crab meat. I have never cooked with crab meat, although I enjoy it when I go out to eat. Stay safe.
