CREAMY CHICKEN SPAGHETTI CASSEROLE

I'm using chicken thighs for this meal but you can use any part of the chicken just cut it in cubes.... I like using chicken thighs because of it's taste, juiciness, dark meat and fat marbling.
This is a meal made from scratch and the chicken broth/stock is used to cook your spaghetti....it is so tasty!
Cooking the spaghetti in chicken broth builds those flavours.
We love cooking with chicken thighs, what a lovely part of the chicken. It got so much flavour and so juicy.
Blending it with fried onions and mushrooms takes it to another level of goodness.

Ingredients
- Chicken breasts or thighs - 6 to 8 cut in cubes
- Chicken or vegetable broth - 6 cups
- Spaghetti - 4 servings, uncooked
- Cream or Evaporated Milk - 1 cup
- Flour - 3 tbsp
- Sea salt - 1 tsp
- Fresh Garlic - 1 clove, or 1 tsp garlic powder
- Pepper - ½ tsp or more
- Onion powder - 1 tsp
- Onion - 1 small, chopped
- Bell peppers - 1 small, any colour, chopped
- Tomato - 1 large, chopped
- Shredded cheese - 1 cup
- Parmesan cheese - ½ cup
- Green onion - 2 sticks, chopped
- Butter or margarine - 3 tbsp
- Olive oil - as needed
- Mushrooms - 4 each, chopped, any type
Instructions
Preheat the oven to 350ºf.
In a boiler add broth, bring to a boil on medium stove top heat.
Cut chicken in small cubes and add to a frying pan on medium heat, add one tablespoon butter, drizzle some olive oil in the pan and cook for 5 minutes. Top with a pinch of sea salt and pepper.
Then add chopped onions and chopped mushrooms (optional) continue cooking for 10 minutes until part cooked lightly brown, lower heat until ready to use.
When broth is boiled, add spaghetti, let cook for about 6 or 7 minutes, then remove into a bowl and drizzle with olive oil. ( If you use water add ½ teaspoon of sea salt, and a drizzle of olive oil then let boil.)
Also add chicken juice from frying pan to the pasta boiler for extra chicken flavour.
Keep broth to reuse for sauce.
You will need a casserole dish 9 x 13 inches or pan of choice.
Toss chicken into your casserole dish, then put the frying pan back on the stove top. Add two tablespoons of butter, let melt. Add sea salt, pepper and onion powder.
Then add three tablespoons of flour, stir around until pasty. Then add 2 to 3 cups of your hot broth, slowly stirring it in your pan. Then add one cup of milk continue mixing until liquid starts to thicken.
Add to mixture pressed garlic or garlic powder. ( At this point taste your sauce if you need to add anymore seasoning do it now) Then pour mixture over your spaghetti and toss together.
Then add the spaghetti mixture to the casserole dish with the fried chicken mixture, some chopped tomatoes and bell pepper, to the casserole dish and toss everything together. Then top with shredded cheese of choice, parmesan, more tomato and bell peppers, and green chopped onion, cover with a piece of foil wrap, you can lightly grease the foil wrap before covering the casserole dish.
Cook covered for 20 minutes then uncovered for 15 to 20 minutes or until golden brown. When baked, serve with garlic toast or fresh bread rolls and a toss salad. Enjoy
