Crispy Air Fried Chicken & Tater Tots

Cut leg off thighs to cook faster and leave skin on, rinse with cold water and place in bowl to add milk and sea salt. This is for brining the chicken for one hour before following recipe method to prepare chicken for air frying.
Now off to our TATTER TOT'S peel and wash potatoes and put in a saucepan pf water and 1/2 tsp sea salt. Boil until fork tender then drain and mash....follow recipe below for details.

Ingredients
- Chicken Thighs and legs - 4 pieces or more
- Potatoes - 2 large or more
- Butter or margarine - 1 tbsp
- Evaporated Milk or cream - 1/4 cup or less
- Flour - 2 tbsp or less, for tater tots
- Black or White Pepper - 1 tsp
- Cumin - 1 tsp
- Ground Thyme - 1 tsp
- Sea salt - 1 tsp
- Onion powder - 1 tsp
- Garlic powder - 1 tsp
- Paprika - 1 tsp
- Flour - 2 cups
- Milk - 1 or 2 cups, plus 1/2 tsp salt
- Sea salt and pepper - pinch for tater tots
- Cooking oil - 2 tbsp, more if needed
Instructions
First you will need a air fryer or deep fryer!
Cut and rinse chicken in water and leave skin on, if you are cutting a full chicken.
If you are using chicken leg and thigh pieces, cut the leg off the chicken thigh for a shorter cooking time.
Then place the chicken in a bowl, then peel and wash your potatoes and put in a medium saucepan with water and pinch of sea salt, boil until fork tender.
Then in a bowl or plastic bag add all your spices and seasonings, pepper, salt, thyme, onion powder, garlic powder, cumin and flour of choice.
Cover or twist the top of the plastic bag and shake the dry ingredients together and only take out what you need from the bag and keep the remaining dry mixture for another use. “DON’T DIP CHICKEN IN THE PLASTIC BAG AND REUSE MIXTURE”
After in a separate bag or bowl add some of the dry flour seasoned mixture and in another bowl have 1 cup milk to place the chicken into and toss in pinch sea salt, about ½ tsp, let rest for about 1 hour in milk and salt.
Take chicken from the bowl one at a time and roll in dry ingredients, then back to the milk and dip it in and take it out and roll in dry ingredients again.
Do this to all chicken until all done twice, place on a plate to get ready to cook.
Put your air fryer on the chicken function and place chicken on a rack with the holes, brush with cooking oil on both sides and MAKE SURE YOU HAVE A DRAINING RACK AT THE BOTTOM to pick on oil and drippings.
Brush more cooking oil if needed between cooking time and depending on the size of your chicken, cook on that function once or twice.
Back to the potatoes, drain water off and mash potatoes, add butter, pinch sea salt, pepper and 1/4 cup evaporated milk or cream.
Continue mixing to whip together but not too soft, only firm.
Scoop one tbsp potato mixture out and shape like a tot…..and place on a rack to cook in the air fryer when ready.
Continue making all tater tots and brush with oil and bake in the air fryer on the chips function or oven on grill.
When all cooked, plate and top with vinegar and pinch sea salt and serve with a dipping sauce or Mother’s Mustard Sauce…see recipe below!
