First you need a cup of pitted dates and it could be the block package or loose dates, then you will put them into a small boiler to start to cook with a few more ingredients.

Ingredients
- FILLING:
- Pitted Dates - 1 cup
- Sugar - 1/2 cup, white or brown
- Water - 1/2 cup
- Butter - 1 tbsp
- Dough:
- Butter or margarine - 1/2 cup
- Brown sugar - 1/2 cup
- Flour - 1 1/2 cups
- Baking soda - 1/4 tsp
- Sea salt - 1/2 tsp
- Rolled oats - 1 1/4 cups
- Water or milk - 4 to 8 Tbsp
Instructions
FILLING INGREDIENTS:
1 Cup, pitted dates
1/2 Cup, sugar, white or brown
1/2 Cup, water
1 Tbsp, butter or margarine
DOUGH INGREDIENTS:
1/2 Cup, butter or margarine
1/2 Cup, brown sugar
1 1/2 Cup, flour
1/4 Tsp, baking soda
1/2 Tsp, sea salt
1 1/4 Cup, rolled oats, any cut
3 OR 4 Tbsp, water or milk, to mix dough
PRE-HEAT OVEN TO 350ºF, 15 Minutes depending on your oven.
METHOD FOR FILLING:
- In a medium saucepan, add pitted dates, sugar and water, let cook until thick and smooth.
- Then remove from heat ADD BUTTER and let cool completely before using.
METHOD FOR DOUGH:
- Cream together butter, brown sugar UNTIL FLUFFY, then sift in flour, baking soda and sea salt.
- Then fold into butter mixture rolled oats, and 4 to 8 tbsp of water or milk, until it forms a dough ball, then place in the fridge to cool for 10 to 15 minutes.
- When filling is cooled and dough is sat, remove from fridge.
- Flour counter top with a dusting of flour and take dough and start to roll to about 1/8’ or so, then you will need a cookie cutter about 2 or 3 inches or so and cut out all your dough first.
- When done take 1/2 to 1 tsp of date filling and place on one side of your dough and fold together, use a fork to pinch down the sides or your fingers.
- Continue doing this until all your DATE TURNOVERS are made, you will need a cookie sheet lined with parchment paper.
- Place them on the parchments paper leaving a space between each one so they don’t touch.
Bake in a pre-heated oven of 350ºF for 15 minutes or until golden brown or depending on your oven.
Serve HOT or COLD but be careful the filling is hot……ENJOY
Baking Tips:
- Having dates cooked in advance and cooled over night in the fridge will speed up making and baking.
- Leftovers keep in plastic bag or tub to keep fresh longer.

The date turnovers were good, But I had trouble folding over. It did not matter if thin or not. The dough kept splitting on me.
Hi Clara: Thank you for your message and for stopping by, sorry to here that. Sometimes when you are working with pastry you may need to work the dough more, or add more water when mixing it together. But most of all when its made and you are folding it use a fork and dip it in some water or milk to wet the tip and press the sides down on the turnovers after you folded them.
