Deep Fried Calamari
Making deep fried calamari with fresh or frozen squad will work lovely, I always promote fresh first but sometime we don't have access to fresh seafood all the time. Making food in season always works best as well.
I love deep fried calamari and anytime I get a chance to have these delicious squad rings in a restaurant I always make note if they are one of my favourites.
But I will share with you one of my favourite takeout I like to visit and get these deep fried calamari from Chelsea’s Fish and Chip’s and Chelsea’s Dining Room. They are located in Lewisporte on the road to Isles, also be Twillnigate NL, You can't miss them!! They have been recognized as the top three places to eat and visit in NL, They are open from May to Labour Day. Plus they have a big Canada Day Celebration with local entertainment. Thats not all they ship all over Canada and seafood you order, and have a seafood truck that goes around for those of you looking for local seafood, open’s in April. The truck is called Treats from the sea.
If you are towing a camper they have a camp ground located by their business and a 26’ Lobster outside making their business if you get loss. @chelseasfishandchips

Back to my Deep Fried Calamari this is a quick and easy recipe you will love if you get to make them. Plus I have a step by step video you can follow to help you get started.

Ingredients
- Squad - 2 Pounds fresh or frozen
- Flour - 1 Cup
- Sea Salt - 1 Tsp
- Black Pepper - 1/2 Tsp
- Paprika - 1 Tsp
- Onion Powder - 1 Tsp
- Garlic Powder - 1 Tsp
- Cold water - 2-3 Cups
- Lemon Wedges - 2-3 each
- Lemon Juice - 2 Tbsp
- Green Onion - garnish
- Cocktail sauce - 1/4 cup
Instructions
1. Cut fresh squad in rings or already have rings.
2. Put Squad in cold water and 2 tbsp lemon juice for a few minutes.
3. In a bowl add all dry ingredients and toss together.
4. Pre-Heat deep fryer to 370º
5. Drop a few at a time into the deep fryer 3:70º and fry for 3.5 minutes, don't over cook squad.
7.Continue doing this until all cooked, then top with a pinch of sea salt, green onion, lemon wedges and a side of cocktail sauce.

Not a lot of steps to this recipe but never over cook the squad because it will be tough to eat, and having them a light golden brown is very flavourful. Then topped with lemon and green onion to garnish and having a side of cocktail sauce and tartor sauce to dip them in is nice too.
