Thank you to my Sister-In-Law for sharing her family recipe for DEIT FRUIT CAKE with us to share with you, this is a healthier cake choice for diabetic's or a low sugar diet.
You need one large or medium navel orange cut into small pieces and all its juice and pulp, sit aside until you get all your fruit ingredients ready to put in a saucepan to boil.
Spices needed is Allspice, Nutmeg, and Cinnamon then toss them in a medium saucepan with raisins, dates, chopped navel orange, see recipe below for amounts and how long.
Boil for 5 minutes in a saucepan, raisins, dates, water, oil, spices and chopped navel orange.
After sift in the two types of flour and then your baking powder and soda, fold it in and your cake batter is ready...

Ingredients
- Raisins - 2 cups or less
- Chopped pitted dates - 1/2 to 1 cup
- Navel Orange - 1 large, chopped
- Water - 2 cups
- Oil - 1 cup, of choice
- Ground Nutmeg - 1 tsp
- Ground cinnamon - 2 tsp, extra for top of cake
- Ground allspice - 1 tsp
- Mixed Nuts - 1 cup, chopped
- Vanilla - 2 tsp
- Egg - 2 large
- Whole wheat flour - 2 cups, all-purpose and sifted
- White flour - 1 cup, all-purpose and sifted
- Baking powder - 2 tsp
- Baking soda - 1 tsp
Instructions
In a large boiler add raisins, dates, water, orange & rind, nutmeg, cinnamon, allspice, and oil boil for 5 minutes on a medium heat.
Remove from heat, let cool.
Transfer into a large bowl and add vanilla, eggs, sifted flour, baking powder, baking soda and chopped nut of choice. Fold all ingredients together after scoop into a pre-grease bunt pan or pan of choice.
Pre-heat your oven to 350ºF and bake your cake for 1 hour or until knife clean depending on your oven. Remove from heat let set for 5 minutes then release to a cooling rack, serve or wait until its totally cool before wrapping.
Bonita’s Tip:
You can add a few red or green cherries if desired, or add extra mixed nuts to top of batter before baking with extra cinnamon.
