Double Baked Potato Casserole

Ingredients
- White Potatoes - 6 large, peeled and boiled
- Butter - ¼ cup
- Sea salt - 1 tsp
- White pepper - ½ tsp
- Sour Cream - 1 cup or 250mg tub
- Cream Cheese - 2 tbsp
- Bacon bits - 6 strips and chopped
- Shredded Chedder Cheese - 2 cups or more
- Green onion - 2 or 3 stems, chopped
Instructions
METHOD:
Start by peeling and boiling your potatoes of choice with 1 tsp of sea salt to season the water and potatoes.
Then in a large bowl add boiled potatoes, butter, white pepper, sour cream and cream cheese then start mashing.
Fry your bacon until almost crispy and chop in small pieces, chop green onion, then add half of them to mashed potato mixture, then add half of the shredded cheese, fold into mixture.
Put in casserole dish, spread out evenly and top with shredded cheese, chopped green onion, more BACON BITS……
BAKE IN A 350º OVEN FOR 35 TO 40 minutes until golden brown.
SERVE WITH YOUR FAVOURITE PROTEIN
Bonita’s Tips: Boiling the potatoes speeds up cooking potatoes, but you can bake them from if you wish and remove potato to mash.
You can use different cheeses, you can also bake this in your BBQ in a roaster with lid, in the summer months.
Green onion only cut the green part and place the onion buds in a ¼ cup of cold water and leave on your counter top to continue growing. Change water daily!
Allergens
We love double baked potatoes but having this recipe for a casserole is amazing, when you are having some friends over for a BBQ you don’t have to fuss. You can make this the night before and pop it into the oven 30 minutes before your company shows up and then start the BBQ. 🙂
