If you are looking to make a delicious birthday cake or just a lovely cake for dessert, well! this cake is for you. Homemade double chocolate cake is made with cocoa, coffee and chocolate chips for the rich chocolate flavours. This cake is so moist and it stays that way until it's all gone.
Sometimes you need a little chocolate thats gelt free 🙂Â
Quick and easy to make and so rewarding, after your cake cools down frosting it whip real whip cream, icing sugar and cocoa blend together and cover the cake. 🙂Â
My video don't show you how to make a sweetheart cake so I'm sharing these pictures with you for that reason. Making this cake is so easy and moist and tasty, first you bake this cake using a square pan and after it have cooled carve the corner in the shape of a heart. Then icing with homemade whip cream frosting and icing with cocoa.  Enjoy:)Â

Traditional Newfoundland Layered Lemon Cake

Ingredients
- Flour - 2 cups sifted
- Brown sugar - 1/2 cup
- Sea salt - 1/2 tsp
- Instant Coffee or Brewed - 1/2 tsp
- Vanilla - 1 tsp
- Eggs - 2 large beaten
- Evaporated Milk - 3/4 cup
- Warm Water - 1/4 cup for coffee
- Ground Nutmeg - 1/2 tsp
- Ground cinnamon - 1/2 tsp
- Unsweetened Chocolate Chips - 1/2 cup
- Cocoa Powder - 4 tbsp
- Baking Powder - 2 tsp
- Butter - 1/2 cup
Instructions
Method:
Preheat 350ºF for 30 min, or if knife is clean.
- Cream butter, sugar and vanilla together in a large bowl, mix eggs together a small bowl first then add milk.
- Mix together coffee to warm water, add to bowl with wet ingredients.
- After sift together all the dry ingredients to the bowl, mix until combined.
- Then fold in chocolate chips until combined.
- Grease a square pan or spring release or use parchment paper, then add batter.
- Bake in a pre-heated 350ºF oven for 30 minutes or until batter comes out clean. ( depending on your oven) When baked let rest for 10 minutes then release unto a cooling rack.
Chocolate Icing
Ingredients:
1- 250 ml, box whip cream
1 cup, powdered icing sugar or more
2 tbsp, cocoa powder
- Mix whipped cream until puffed, add cocoa and powered icing sugar, mix well, add more icing sugar if needed.Â
- Put in the fridge until ready to use.
Chocolate Chips
Ingredients:
1 cup, chocolate chips
1 tbsp, milk
1 tsp, vanilla
- In a bowl melt the chocolate chips in the microwave or double boiler for 2 minutes.
- When melted, add milk and vanilla, keep mixing with spoon.
- Then spoon the chocolate over top of chocolate cake in chucks until all used, put cake fridge until sat or in cool room.
BAKING TIPS:
- Use a kitchen aid or bender to mix faster.
- Use 1/4 cup perked coffee if you don’t have instead coffee in this recipe.Â
- Serve with mint tea when ready to eat, delicious.Â

I have tried a number of your recipes and they turned out well. I made this double chocolate cake recipe and it turned out to be really heavy and dry. I don’t know what I did wrong.
Hi Brian, Thank you for your message and for making our cake recipe, sorry it didn’t turn out for you its a lovely cake. I guess a couple of things could have factored into the heaviness of the cake. One! Sometimes the flour got to do with that, this time in to year we have a lot of humidity and it would make the four damp and heavy. Two! Sifting it a few times before adding it to the recipe can help.
How did the batter look when you finished mixing everything together, at 5.08 on the video it shows what the batter should look like. The texture soft and air bubbles thoughout the mixture, filling light to start. I hope this helps if you try to make it again, have a wonderful day. 🙂 Bonita
