Fish Fry on Outside Grill

We are using atlantic cod in on fish fry, but if you don't have access to cod fish you can use what ever fish you have available.
This is a small cod fish here but we sometime get codfish that is twice this size and so so tasty, what I did in this recipe I cut the fillet in half again and rolled the cod in a wet wash first. Milk and egg with sea salt, pepper and onion powder, then flour with the same seasonings and only rolled it once.

Here in Newfoundland and Labrador we LOVE our fat pork, this is a lovely way to fry our fish, what we do is cut it in small pieces and start the fry with some batter and oil.
This is exciting, fry your fat port until it starts to turn a light brown and the oil is released. Then the fun part starts get your cod fillets ready and fry in the cast iron pan for 5 to 7 minutes on each side, or until a golden brown.

Ingredients
- Cod fillets - 4 pieces
- Fat Pork - 1 piece chopped
- Egg - 1 large
- Milk - 1 cup
- Flour - 1 cup
- Sea salt - 2 tbsp
- Pepper - 1 or 2 tbsp
- Onion Powder - 1 tsp
- Butter or margarine - 2 tbsp
- Olive oil - 2 tbsp
- VEGGIES
- Potato - 2 medium, sliced
- Carrot - 1 medium, sliced
- Onion - 1 medium, sliced
Instructions
Prep work about 10 minutes , frying time 10 to 15 minutes.
Method:
- In a bowl mix egg and milk together, add a pinch of all your seasonings , in another dish put your flour and a pinch of your seasonings together. Season your cod with a pinch of salt, pepper, onion powder.
- Start rolling your cod in the egg mixture, then roll your cod in flour mixture.
- Preheat your cast iron frying pan on medium heat for couple of minutes on your grill or stove top.
- Then add one tbsp of olive oil and butter after it starts to warm, add chopped fat pork and get those frying until it starts to turn brown and some oil is released.
- Remove some oil from pan, then place your cod filets one at a time skin side up to the pan then let fry for 5 to 7 minutes.
- Fry your cod for 5 to 7 minutes on one side or until it's golden brown. Flip to skin side and fry for another 5 to 7 minutes or until golden brown.
- After all cod have been fried you can season again if needed, if you are not ready to serve your cod put on glass plate and place in your oven on 170°, don't cover. This will keep your cod from going soggy and it will stay crisp, or keep on the grill to keep warm.
- Veggies in a foil wrap and parchment paper, cut and clean potatoes, carrot, and onion, add 2 tbsp butter, seasonings sea salt, pepper, onion powder, fold into a pouch and place on the grill to steam and grill.
Serve with boiled potato, fried onions and homemade bread or buns.
