FISH NUGGETS

Our recipe here today is a simple and tasty FISH NUGGET meal, the seasonings are made up of a few of my favourites and the method is quick and easy.
After you deep fry these tasty little fish nuggets you can rewarm them in the oven to crisp them up again.
Keeping these fish nuggets crispy by placing them in the oven while you prefer the fry's and get ready to serve them.
First you will need boneless, skinless cod filets and cut in 1- 1/2 inch chucks, you can use part frozen or fresh cod or white fish for this recipe.
If you are a seafood lover you will enjoy these tasty and crispy little fish nuggets, plus make your self a boat to serve the fish nuggets in.

Ingredients
- Cod fillets - 2 to 3 pieces, chucked
- Dry Rub #1
- Flour - ½ cup
- Sea salt - pinch
- Pepper - pinch
- Wet Wash
- Eggs - 2 each
- Milk - ½ cup
- Sea salt - pinch
- Pepper - pinch
- Dry Rub #2
- Flour - 1 cup
- Cornmeal - ¼ cup
- Pepper - ½ tsp, black or white
- Sea salt - ½ tsp
- Cumin - ½ tsp
- Paprika - ¼ tsp
- Thyme - ½ tsp, ground or leaves
- Onion powder - ½ tsp
Instructions
Method
Preheat deep fryer to 360ºF with a vegetable oil inside.
Rinse cold water over cod and cut in small chucks 1½ inches, having the white fish part frozen is easier to cut.Â
Add all dry rub #2 ingredients into a bowl or bag and toss together.
Then add dry rub #1 ingredients in bowl or bag and toss together.
Then in a small bowl add egg and milk, salt and pepper, mix together.Â
Start by rolling cod chucks in flour dry rub #1, then roll in wet wash, after roll in dry rub #2 and put on a plate until all cod nuggets are rolled.
Start frying cod nuggets in deep fryer for about 5 minutes for 6 nuggets at a time.
Bonita’s Tips:Â
After fried place on paper towel to drain of oil, top with vinegar and sea salt, serve with a tarter sauce, fry’s or salad.Â
Allergens
We so enjoyed making our paper boats and I’m sure you would love to make them as well, they make great fun food server’s for family night. Making them with brown paper gives them a old fashion look and it also soaks up the oil from the deep fry.
Evenly coat the cod pieces with the seasoned flour at the beginning, then egg wash, after extra flour seasonings.
Raymond will share with you the instructions to his boat, 1. Fold in half your paper. 2. Fold in half again to make the mark. 3 & 4. Fold down your two corners. 5 & 6. Fold up the ends on both sides. 7. Fold front and back layers up. 8 & 9. Pull sides apart and flatten. 10. Then shape the boat use for fun or food.
