Clean and cut all your veggies into bit size pieces, then put aside until ready to use it. After get the chicken pieces you enjoy eating and toss in flour, sea salt and a pinch of pepper. Heat a large skillet and drizzle with olive oil on a medium to high heat....then toss your chicken in it and fry for 5 minutes on each side.
While cooking chicken in another pot with water, sea salt and olive oil start the water boiling to add penne noodles or pasta of choice...
This is a meal you are going to love, all the flavours of the chicken dippings and veggie cooked in the one skillet. Then covered in a tasty homemade pasta sauce....

Ingredients
- Chicken - 1 piece pre-person, of choice
- Flour - 3 tbsp
- Sea salt - 1 tsp
- Pepper - 1 tsp
- Olive oil - 3 tbsp, more for pasta
- Mushrooms - ½ pound, sliced
- Celery - 2 sticks, sliced
- Carrots - 2 carrots, peeled and sliced
- Cauliflower - ½ chopped in pieces
- Bell peppers - 1 medium, cut in strips
- Onion - 1 medium, peeled and strips
- Garlic - 2 cloves, fresh or powder
- Broth or stock - 1½ cups
- Tomato sauce - 2 cups
- Savoury - 1 tsp
- Oregano - 1 tsp
- Thyme - ½ tsp
- Penne or rotini pasta - 1 - 8 oz box, uncooked
Instructions
First; Dredge chicken in flour, ½ tsp sea salt and pinch pepper, then put in a hot frying pan with olive oil, on a medium to high heat, fry for 5 minutes on each side.
Remove chicken from pan and put in a plate and keep warm covered with a piece of foil wrap.
Reserve dripping in pan to cook, slice mushrooms, celery, bell peppers, cauliflower, carrots and onion. Season with savoury, thyme, oregano and pressed garlic last!!!
Cook for 3 minutes or until carrot and celery is tender.
Stir in tomato sauce and rinse jar with 1½ cups chicken broth, mix together with veggies then place chicken on top of sauce.
Bring to a boil; cover, reduce heat and simmer for 25 minutes or until chicken is done.
In a saucepan with a pinch of sea salt and water, bring to a boil on stove top and cook pasta by the package directions.
Drain pasta water reserving ¼ cup for garden chicken pan, put pasta on a platter with a drizzle of olive oil, then scoop sauce over it and top with chicken.
Serve Immediately!!!
Bonita’s Tips:
You can bake this in the oven on a 350ºf heat for 25 minutes, after chicken have fried a little in cast iron pan to be oven safe.
Use more seasoning to taste after cooked.
Eating healthy is not always affordable or available, the cost of food now have double and it makes it even more difficult to make healthy meals for our families.
Use the noodle of choice or use penne noodles for your side dish to have with this tasty garden chicken meal!!
