If you are looking for a old fashion recipe from your childhood called GRAHAM SANDWICH BARS, I have them hear for you to make and enjoy. So sit back with a cup of tea and watch our short video tutorial with step by step instructions on how you can make these delicious little treats. 🙂
Have a pack of gelatine with cold water for the start of the recipe, getting all your ingredients ready before you start is always a good practice.
Having whatever food colouring you would like for the season you are making them, for example" seasonal colours like Christmas, Halloween, Birthdays and Easter. Using the food colouring to change the look and the style of the sandwich bar

Ingredients
- Graham Crackers - 1 box
- Cold Water - 3/4 cup
- Gelatine - 1 - 15ml pack, or 1 tbsp
- Sea salt - 1/8 tsp
- White sugar - 3/4 cup
- Confectioners sugar - 3/4 cup
- Baking powder - 1 tsp
- Vanilla extract - 1 tsp
- Coconut - 1/2 cup, of choice
- Chocolate Topping:
- Confectioners sugar - 1 - 1/2 cups
- Cocoa powder - 4 tsp
- Cold water - 2 1/2 - 3 tbsp
Instructions
- Layer a 9 x 9 inch baking pan with parchment paper, then one layer of graham crackers.
- Keeping equal about of crackers for the top, set aside for last.
- In a small bowl put cold water and pack of gelatine, mix together let stand for 5 to 10 minutes until gelatine is swelled or spongy.
- Then stir in white sugar, sea salt and gelatine in a saucepan, on low to medium heat let cook on stove top until all sugar have dissolved.
- When hot remove from heat and stir in confectioners sugar, then let cool to room temperature. ( leave in saucepan or transfer to medium bowl )
- When cool, transfer all gelatine mixture into a mixing bowl and mix until foamy.
- Then add in baking powder, vanilla and food colouring of choice.
- Continue mixing until you see the gelatine starting to hold stiff picks, this will take about 10-15 minutes.
- Then pour filling over graham crackers, after you got all filling in pan and smooth.
- Then layer graham cracker the same way you layered the bottom so the are even with each other.
- In a small bowl mix confectioner sugar, cocoa and water together until combined.
- Then drizzle over top of graham crackers, or spread.
- Let set for over night or 6 to 8 hours, in the fridge.
- After your filling have sat, remove the parchment paper with the graham sandwich bars, then cut evenly along the edge of each cracker, roll sides in coconut or grated chocolate or leave plain.
- The graham sandwich bars can be kept at room temperature, or fridge, if you like to keep them longer freeze remove as needed.

After you have layered the graham crackers and filling, you can top with a drizzle of chocolate or homemade chocolate icing. Then refrigerate to set the filling and then they are ready to cut in bar shapes, or leave then square.
