Grilled BBQ Chicken and Veggies

Giving the chicken a little grilling first in the frying pan give it a lovely taste, then top with chopped onions, brown those off adding more butter or oil if needed. Then season with sea salt, pepper and onion powder, or any seasonings you enjoys.

Ingredients
- Chicken Thighs and legs - 2 or more, skinless
- onion - 1 medium chopped
- potatoes - 2 medium, chucks
- carrots - 2 medium, chucks
- black pepper - 1 tsp
- sea salt - 1 tsp
- onion powder - 1 tsp
- Worcestershire - 1 tbsp
- ketchup - 3/4 cup
- White vinegar - 1/4 cup
- brown sugar - 2 tbsp
- olive oil - 1 tbsp or more
- butter - 1 tbsp or more
- chicken broth or water - 1 cup
- SOFT TACO SHELLS
- All-Purpose Flour - 2 1/2 cups or for rolling
- baking powder - 1 tsp
- sea salt - 1 1/2 tsp
- Warm Water - 3/4 cup, more if needed
- Olive oil - 3 tbsp
Instructions
Grilling time 35 to 40 minutes, prep-time 10 minutes, serving for 2 people.
METHOD:Â
- In a cast iron frying pan on your outside grill or stove top, start the heat on a medium to high heat. Add butter, oil, chopped onions and skinless chicken legs and thighs, sea salt, pepper and onion powder.
- Cover with lid or foil wrap or just leave open with grill cover down, cook for 15 minutes on one side then flip oven chicken and cook for 15 minutes on the other side.Â
- In a small boiler with water add chucks of veggies only part cook them, drain off water to add to cast iron frying pan with chicken.
- In a small bowl make BBQ sauce, add worcestershire sauce, ketchup, white vinegar, water and brown sugar mix together then add to cast iron pan with chicken and veggies.Â
- Fold all the ingredients together and cover again for another 10 minutes or so, if you are not in any rush you can lower the heat and let simmer while you enjoy the outside with a cold drink.Â
- When cooked add to dinner plate and serve with fresh bread or rolls, and a side of salad.Â
SOFT TACO SHELLS:
- In a medium bowl add all dry ingredients and toss together.
- With a wooden spoon, mix in olive oil and warm water.
- Mix until all ingredients are combined and it starts to form a ball.
- Remove from bowl onto your counter top or board and knead together and add more flour to remove sticky.
- With a knife cut out 15 pieces, more or less depending on the size of soft taco’s you like.
- Each piece roll into a ball, with your rolling pin flatten the balls and continue doing this until all the balls are rolls out.Â
- Three ways to cook these, one in the oven on a cookie sheet, in a dry frying pan just until it go golden brown marks, open flame on your grill, or stove top damper. Place in a small towel to keep warm until all cooked.
- After they come to a complete cooling store in a plastic storage bag at room temperature or freeze the leftovers for next use.

For years I would be looking and trying different recipes until I got the ones our family enjoyed. We are true Newfoundlanders for our cultural foods, but we do like cooking other cultural meals to enjoy. This recipe is one I would make on our outside grill in the summer and fall, having meals outside is comforting and nice family time. You can make this recipe your own by changing the seasonings and veggies our family likes and enjoys, the ones i’m sharing with you today is our families favourite. Oh, my goody! This is very much like what my Mom (who sadly and quite suddenly passed away just last month) used to make with just a slight twist. She placed the chicken and veggies in an oven pan, smothered with her choice of BBQ sauce (Diana’s was her fave) then covered and baked it til done. She often did that in the cold winter, hence no BBQ.
I can tell you, she would have loved yours! I especially love the corn and tortillas on the side, too!
We grew up north east of Halifax and your recipes always remind me of home.
