Homemade Beet Dip
Hi and welcome to my website, thank you for stopping by and checking out this delicious recipe for homemade beet dip. I can seat here and try to convince you that this is the best dip out there but you need to make it and you tell me. There is only a few simple steps and you will have this bright pink beet dip with so many lovely flavours in it.
You need fresh beets to make this dip, it don't have to be new beets it can be out of season beets.

Ingredients
- Beets - 3 medium
- Greek Yogurt or Sour Cream - 1-2 cups
- Fresh Garlic - 2-3 cloves
- Lemon - 1/2 fresh or 2 tbsp juice
- Sea salt - pinch
- Black pepper - pinch
- Peprika - 1/2 tsp
- Olive Oil - 1/4 cup more if needed
- Mayonnaise - 1 tbsp
Instructions
- Clean beets, add full beets to a pan with a drizzle of olive oil, place in a pre-heated 350º of heat for 60 minutes or fork tender.
- When cooked remove from heat let cool, peel skin off and chop beets and add to food processor leaving a small about for garnish.
- Then add greek yogurt, mayonnaise, garlic, squeezed lemon juice, salt and pepper, paprika.
- Drizzle in the olive oil and pulse the food processor until the beet brakes down, then turn on to medium and continue mixing, adding more olive oil if needed.
- This will take about 5 minutes to make, then remove from food processor and put in bowl.
- After cut up pieces of beet and put on top of the beet dip and cover, then put in fridge to set.
I LOVE BEETS! Having recipes to use beets in is wonderful, this is a lovely recipe if you are expecting company or planning a dinner party. Homemade beet dip is made with fresh local beets and fresh garlic, whats so lovely with this recipe you can use greek yogurt or sour cream to make this delicious dip.
You can use fresh beets from the garden or beets that have been stored over the season but still fresh.
Roasting your beets after they are cleaned and then put them in a oven proof dish with a drizzle of olive oil over them.
You will need a food processor or blender to mix together all your ingredients, adding the ingredients in layers. Adding the olive oil gradually to blend the beets and make this delicious beet dip.
Blend them together until nice and creamy, leaving a few pieces of the beet in small chucks to mix into the beet dip for garnish.
