This a delicious pie with a tasty and easy pastry crust and topped with a zesty key lime filling and whopped cream.
You will need freshly squeezed lime juice or bottled lime juice.
Then of course you will need to make a lovely homemade pie crust.
Then after you have the pie crust made a in the pan, place in a 350ºF oven and bake for 10 minutes, then remove from the oven.

Ingredients
- FILLING INGREDIENTS:
- Egg yolks - 4 each
- Lime juice - 1/2 cup or 4 limes freshly squeezed
- Sweetened Condensed Milk - 1 can
- MERINGUE INGREDIENTS:
- Egg Whites - 4 each, egg whites
- Cream of tartar - 1/2 tsp
- White sugar - 1/2 cup
- PASTRY INGREDIENTS:
- Flour - 2 cups
- Cold butter - 1/2 cup, cubed
- Sea salt - 1/2 tsp
- Cold water - 1/2 cup
Instructions
METHOD for FILLING:
- Crack eggs and separate yolks in one bowl and whites in another bowl, mix egg yolk until its a lemon colour.
- Then blend in sweetened condensed milk slowly until all combined, removing all from can.
- Add lime juice and mix well, place in the fridge until you are ready to use it.
METHOD for MERINGUE:
- In bowl with egg whites add cream of tartar beat until foamy.
- Adding sugar a little at a time until all used, beating with a high speed blender until white peaks.
- Into your lime mixture add 6 tbsp of meringue and fold together.
- Pour all filling into a baked pie crust and recipe below.
- Then add all the meringue and bake in a pre- heated oven of 350º for 10 minutes or until golden brown. Remove and cool before cutting.
9-INCH PIE CRUST:
INGREDIENTS:
2 cup white or wheat flour 1/2 cup Cold Butter
1/2 tsp Sea salt 1/2 cup cold water
1 piece parchment paper for rolling dough
- Mix flour, butter ( chop in pieces) and sea salt together in bowl mix with your hand or food processor when mixed add water mix until it shapes into a ball then remove from bowl/mixer.
- Put a piece of parchment paper on the counter and sprinkle with flour then cut the ball into two pieces then put your pastry ball on top of it then roll until all even.
- Pre-heat oven to 350º and bake for 10 minutes, after add all filling and meringue into baked crust you will need to bake again for 10 minutes or until golden brown.
BAKERS TIPS:
- If you are only making one pie crust, roll the other on parchment paper then cover with a piece of clear wrap and roll away from you, then freeze for another use.
- When cracking eggs if the shell goes in the bowl, use the shell to remove the small piece from the bowl easier.
