Maple Glazed Salmon with Herb and Feta toss salad

This is a step by step tutorial of making this delicious meal for two or a big family.
Look at this maple glazed salmon frying in my cast iron pan, a golden brown on one side and a crispy skin on the other side. We also got a recipe here for dollar fry's and they are my husbands favourite. 🙂

Ingredients
- Salmon Fillets - 2 or what you will need, and skin on.
- Maple syrup - 1 cup
- Garlic Cloves - 2 each
- Butter - 1 tbsp
- Olive oil - 1 Tbsp or of choice.
- Sea salt - pinch as needed
- Black pepper - pinch as needed
- Lemon wedges - as many as you need
- HERB and GARLIC DRESSING
- Balsamic Vinegar - ¼ cup
- Olive oil - ¼ cup
- Fresh or ground ginger - 1 tsp
- Garlic Cloves - 3 cloves
- Maple syrup - ½ cup
- Soy sauce - 6 tsp
- Dill - ½ tsp
- Black pepper - 4 pinches
- FETA and DILL DRESSING
- Plain greek yogurt - ¼ cup
- Garlic Cloves - 2 cloves
- Olive oil - 1 tbsp
- Lemon juice - 1 tbsp
- Honey - 1 tbsp
- Black pepper - pinch as needed
- Dill - 2 tsp
- Feta cheese - ½ cup
- TOSS SALAD:
- Romaine lettuce - 1 full bunch
- Carrots - 2 o 3 each, shredded
- DOLLAR FRY'S:
- White potatoes - 1 potato per person, cut in round slices.
- Olive oil or Butter - 1 tbsp each
- Frying pan - cast iron or of choice
Instructions
PAN FRIED SALMON:
You will need a large cast iron frying pan or a pan of choice, warm pan on a low heat and add oil and butter.
Then season your salmon on both sides with sea salt and pepper, let rest for 5 to 10 minutes at room temperature.
Then raise the heat of the frying pan to medium to high, then add your filets of salmon to pan skin up for 4 minutes of golden brown.
Then flip over your salmon skin down until the skin is crisp for 3 to 4 minutes.
Before removing salmon from the pan, in a bowl add maple syrup and crushed garlic mix together then pour over salmon, cover the pan and turn the heat off.
Let sit for 2 minutes in a pan, then remove from the pan onto a plate, pour sauce over salmon, toss salad with herb and garlic dressing, feta and dill dressing and dollar fry’s or regular fry’s..
Toss Salad:
Recipe:
1 head romaine lettuce
2 carrots, Peeled and shredded
Method:
Clean and chop lettuce and grate carrots into a bowl, toss together and place on the side of the plate single servings of each plate, serve the dressings on the table in bowl, because some may like less and some may like more of the dressings. “But usually you would pour the herb and garlic dressing over your toss salad, then top with a scoop of the feta dressing and enjoy.”
Herb and Garlic Dressing & Feta and Dill Dressing:
Recipe:
¼ cup balsamic vinegar ¼ cup olive oil
1 tsp fresh or ground ginger 3 cloves chopped garlic
½ cup maple syrup 6 tsp soy sauce
½ Tsp Dill 4 Pinches Pepper
Method:
In a large bowl add all your ingredients together and toss with a whisk, you can add more or less of each ingredient to your taste.
This will make 1 cup of herb and garlic dressing and will keep in your fridge for up to a week.
Feta and Dill Dressing:
Recipe:
¼ cup plain greek yogurt 2 Cloves pressed Garlic
½ cup feta cheese 1 Tbsp Olive Oil
1 Tbsp fresh lemon juice 1 Tbsp liquid Honey
Pinch Pepper 2 Tsp Dill
Method:
In Large bowl add yogurt, pressed garlic, feta cheese and fresh lemon juice, Mix together with a wooden spoon then add honey, pepper and dill.
Slowly pour in your olive oil until all ingredients have mixed together.
Make ½ cup of feta and dill dressing, you can add more of each individual ingredient for your taste.
Bonita’s Tips: Using fresh herbs and garlic will enhance the taste more.
Dollar Fry’s:
2 White potatoes
Peel, clean and cut potatoes in slices and leave the skins on or off the potatoes, dry well and pan fry or deep fry until golden brown. After fried toss a pinch of sea salt over top then serve with maple syrup pan fried salmon and toss salad.
TOSS SALAD:

Years ago when we lived in the NWT of Canada we loved to eat at this bistro called BULLOCK’S this was a quaint, rustic little spot. Located in old town, they served local seafood, pan fried fish, and deep fried fish and chips with a salad that always made us say, we need to know the recipe.
We never asked because you know they are not going to give us their famous dressing recipes.
One day our two boys, myself and Raymond and our daughter- in- law, decided to try and make this same dressing to have and make when we like to have it with a meal. Hours later we looked at each other and said
THIS IS IT!
Of course its not their dressing and if you are ever in the NWT go and visit their bistro and enjoy the recipes of the menu for that day.

Easy to make and so healthy and fresh, for us its atlantic salmon but for you it could be whatever you have in your province, state or country.
