MEATLOAF LASAGNA

Step by step pictures and video tutorial, this recipe is a method for two personal size meatloaf lasagna but if you wish to make it bigger it will work great.

Ingredients
- Cooked meatloaf - 2 slices
- Pasta sauce - 1 cup
- Cottage Cheese - 1 cup
- Lasagna Noodles - 4 pieces
- Mozzarella Cheese - 2 slices or shredded
- Black or White Pepper - 1/2 tsp
- Sea salt - 1/2 tsp
- Oregano seasoning - 1 tsp
- Tomato - 2 slices
- Olive oil - drizzle as needed
Instructions
- Cut cooked meatloaf in slices and place on a plate.
- Start a saucepan boiling with half full of water, with a pinch of sea salt and drizzle of olive oil.
- Break lasagna noodles in half and you will need two full noodles pre-person, boil until fork tender or part cooked.
- Then you need the personal sized dishes to make and bake your lasagna in, i’m using case iron small frying pans.
- After everything is ready start making your personal size lasagna dishes, drizzle a drop of olive oil in pan, then a half piece of cooked lasagna noodles or full, top with pasta sauce just to cover noodle.
- Then top with a slice of cooked meatloaf, top with cottage cheese, pinch of sea salt, pepper and oregano.
- Then place another piece of lasagna noodle more pasta sauce and mozzarella cheese, or cheese of choice.
- Top with freshly slice tomato and oregano seasoning.
- Bake in a pre-heated of of 350º for 20 to 30 minutes, serve with a fresh toss salad and garlic bread.
