MINT CUSTARD DESSERT

This is a mason jar mint custard dessert that is so tasty its hard to only have one. So sit back with a cup of MINT tea and enjoy our short video tutorial and recipe posted below!

Ingredients
- Mint tea bags - 2 or 3 bags
- Milk - 1½ cups
- Sugar - ¼ cup
- Sea salt - ¼ tsp
- Cornstarch - 3 tbsp
- Egg yolks - 2 each
- Vanilla extract - 1 tsp
- Mint leaves - 10 each
- Green food colouring - 2 drops or juice from spinach or kale
- Ginger Snap Crust:
- Ginger snaps - 10 each
- Butter or margarine - 2 tbsp
Instructions
Method for Filling:
In a saucepan add milk and cook on a medium heat until bubbling, remove from heat and
add mint tea bags and let steep for 10 minutes.
After remove tea bags and pinch dry to remove all the mint flavour from them. Then add sugar and cornstarch, 2 mint leaves and whisk together and place saucepan back on a medium to low heat until liquid starts to thicken. Remove mint leaves and DON’T LET MILK BURN….
In two small bowls crack egg and remove whites in one and in the other add yolks then whisk together, add about ¼ cup hot milk liquid to them and keep whisking so it don’t cook. Then pour into saucepan and continue whisking until all combined. Cooking and stirring for another few minutes, on medium to low heat. DON’T LET MILK BURN…
Stir in vanilla and green juice or food colouring.
Remove from saucepan into a bowl then cover with clear wrap directly over surface, place in fridge to chill for one hour or overnight.
Method for Crust:
In a bowl crush cookies and add melted butter and mix together.
Add equal amounts of ginger crumbs to each mason jar, top with mint filling and serve with whipped cream and a mint leaf. Add chocolate syrup or chocolate shavings, or a mint candy…..you decide.
To garnish top, you can make meringue candies, by making the meringue and on a cookie sheet add small dollops of meringue and bake on 375ºf heat for 5 to 10 minutes until golden brown. Then turn oven off and leave meringue candies in oven for 10 minutes, then remove.
Ingredient’s for Meringue:
2 egg, whites ¼ cup, white sugar 1/2 tsp, cold water 1 drop of green food colouring or green juice

Add one tbsp of the green spinach juice in with the meringue or food colouring.
This is optional if you just want to use mint leaves or mint green candies.
Bake the meringue candies for 10 minutes on a 375ºf heat and then turn off oven and leave inside oven for 10 more minutes before removing.
