Newfoundland Bread Pudding

You will need a loaf or less of stale bread or any type.

Ingredients
- Stale Bread Crumbs - 1 loaf
- Chopped onion - 1 small
- Sugar - 2 tbsp
- Butter - 2 tbsp, melted
- Baking powder - 2 tsp
- Flour - 1/4 cup
- Savoury or Summer Savoury - 3 tsp
- Water or Broth - 1 cup or less
Instructions
- Put in a pudding bag or pudding tin with lid and boil for 30 minutes with the jigg's dinner or on its own.
- If you are going to boil/steam your pudding on its own fill the boiler up 1/4 of the way with water, then put a foil bowl or rack in the bottom of boiler to place your pudding bag or pudding tin on.
- If you are using the liquor/ broth from the jiggs dinner for gravy it must be taken out before the bread pudding goes in, as it will give a sweet taste to the gravy.
- Put it in the boiler the same time as your potatoes as they cook about the same.
- If you use the pudding bag remove from the boiler and from the bag so it don’t become to soggy.
- Cut in slices and serve with meal.
- This Newfoundland Bread Pudding is like stuffing but the shape of a pudding, smells and tastes amazing and can be served with Jiggs Dinner, with or without gravy.

If you dont have a pudding tin what else can you use….. besides pudding bag.
Hi Anne, Thank you for your message and for stopping by, I’ve used a heat safe bowl before, small bunt pan, silicon pan, only have that in the boiler of water quarter ways up, and cover the boiler. I how its not a ideal pan or tin but until you get one that will work great, never have the pan touching the bottom of the boiler have a foil bowl, or a rack at the bottom so it don’t get direct heat. I have used Saran Wrap for my bread pudding to steam it in the pot. This looks so yummy!!!

This looks good done in the steamer….its the same ingredients as my stuffing….
