OATMEAL RAISIN COOKIES

If you are looking for a gluten free oatmeal raisin cookie you are in the right place, my recipe is quick and easy and ever so tasty. Only a few ingredients in this recipe and 8 to 10 minutes baking time. Some time you only need just a little taste of something sweet to satisfy your craving for a cookie, well this is it. Ingredients
- Oats - 2 cups
- Raisins - 1 cup
- Brown sugar - 1 cup
- Baking powder - 2 Tsp
- Melted Butter - 1/2 cup
- Egg - 1 beaten
- Vanilla - 1/2 Tsp
Instructions
METHOD:
- In a medium bowl add oats, brown sugar and baking powder and toss together.
- Then add melted butter to mixture and fold together.
- In a small bowl beat one egg, vanilla, then add beaten egg to mixture and mix well, then add raisins.
- You need a cookie sheet lined with parchment paper, drop batter by half tbsp full about 3 inches apart.
- Pre- heat oven to 350ºF, set timer for 8 to 10 minutes, when baked let cool for a few minutes, before removing it from the pan. .
BAKING TIPS:
- Baking cookies for 8 minutes for soft cookies, 10 minutes for crispy cookies.
- Add more oats to thicken batter if a little wet.

This recipe was a viewers request and I have been trying to get to each and everyone of our request from our viewers recipes, and this one is one of my favourite cookies of all. If you are expecting company you only got five minutes prep work before you put them into your oven….. 10 minutes baking and 10 minutes resting, while you make tea. How wonderful is that, use a 1/2 tbsp to scoop the batter out of the bowl and line your cookie sheet with parchment paper…..NOT WAX PAPER! Then seat and read your favourite book, or movie.

Thank you for your recipe Bonita, just need to know if I should use quick cooking oats or the original Oats, also do I measure the butter before of after it is melted? I will make these for Christmas cookie exchange.
Hi Celeste: Thank you for your message and for visiting our channel, you can use any type of oats whatever you have on hand. Plus the butter I cut in cubes so if you cut a 1/2 cup of the butter block then melt it. If it looks like its more you can take some off and if it looks like its less add some more.
